I love Indian food and have been experimenting with curries at home. So, I would also consider trying an Indian influenced dinner menu:

Mini Veggie Samosas (Deep fried wontons filled with fork mashed potatoes, peas with a little Garam Masala)
Roasted Eggplant Curry
Homemade chapati (Pan fried flatbread)
Chicken and Lamb Kebabs
Mango sorbet

I would do a traditional home-made Korean dinner with some Japanese influenced appetizers. Very tasty, hearty and relatively simple. Everything is pretty much just tossed together.

Spicy Tuna Tartar with Crispy Wontons
Cucumber Salad with Rice Vinegar Sesame dressing
Korean Short Rib Stew (short ribs slow braised with lots of fingerling potatoes, chunks of carrot, pearl onions in a slightly sweet and savory sauce)
Sticky white rice
Yellow pickled daikon as a little condiment
Liquor: Korean beer and Soju
Dessert: Red bean ice cream and sweet Korean rice cakes (kind of like Mochi)

Another Thought For Dinner:

Crabs & Crab Legs (melted butter Chesapeake Old Bay)
Fried Clams (Tarter and Cocktail sauce)
Steamed Shrimp (melted butter Chesapeake Old Bay)
Corn On The Cob (roasted with onions, green pepper, red pepper and butter, salt & pepper)
Buttermilk Biscuits (with butter and honey)
Tossed Salad
Ice Cold Beer
Peach Cobbler

Give everyone huge aprons, rolls of paper towels and sit them down at the table which has been covered with newspaper. People will relax and the conversation will flow into laughter.

I totally understand such Theresa. Perhaps living away from our families, I do try to make an effort to entertain a lot as the neighbours and friends end up filling the void from the family, and with the winter blues it is nice to see a house filled with people enjoying good foods!

With the schedules we keep it is seldom we have company anymore. When we do get together it is usually at the home of the most centralized person because we are so spread out; live so far apart. It ends up that we all travel about the same distance and sadly, we are no longer in the center.

I should plan a party right before summer..

I hardly ever get to buy pork chops so every time I see the word I get hungry. My sister make the best golden fried pork chops, taters and gravy, ever.

I had to do this quite a few times throughout my life for hubby's bosses and my own. but not for raises, more for entertaining and getting to know them, just plain enjoying the company away from the corporate world!

Start by having cheeses and crudites, good garlicky olives

appetizer ideas: Shrimps sauteed in olive oil, garlic, cilantro and chillie peppers
Rissois de camarao (shrimps pastries), vol-au-vent with mushroom cream filling

Main dish ideas: Duck with rice, baked dry cod fish, grilled meats with rice and black beans

Side dish ideas: tomato & fresh mozzarella salad, green salad, asparagus

Desert: fruit salad, chocolate mousse, avocado mousse, mango mousse

So many people do not get a real home cooked meal. People just do not think that food is that important. The income does not matter. People making alot of money still eat fast food, greasy food, 'quick fix hunger food". I think that a meal that is made from counter to oven or frying pan will please. The simple basics will comfort and satisfy.

Mashed potatoes
Apple pie

Fried chicken or porkchops
Real mashed potatoes,
Green beans,
Homemade Buttermilk Biscuits
Gravy and cobbler for dessert
