Baking Soda Question

Can new baking soda be to strong? I baked Banana Bread muffins with new baking soda. I used the 1 tsp measurments and it still shines thru giving an off taste to the muffins. The recipe was 2 cups all purpose flour, 1 tsp baking soda. 1/2 tsp salt, 2 eggs, 3/4 cup brown sugar and 2 1/3 cup bananas. I have made this before with out a problem.

    Baking Soda is three times stronger than baking powder. Are you certain you didn't use the tablespoon instead of teaspoon, by accident? Or, there is the possibility there is something not quite right with that box. I always try to use the freshest ingredients, so new is always on my agenda.

    There is the possibility you got the wrong box (THE ONE FOR USE IN THE REFRIGERATOR ONLY), AND YOU SHOULD NOT EAT THE FOOD. Please check to box.

    It was the AH kind in a bag. My neighbor opened it up for me. Mine was old and smelled because my daughter did not close the bag back the box was in. It was the normal kind. I just think it was stronger for some reason.

    I have found that taking my baking soda out of the box and putting it in an airtight container helps it keep its "oomph" longer - especially in our very dry and hot environment.

    I know that's the opposite of your problem, Amy... but thought I'd throw it in.

      That is ok. We ended up throwing them out as we did not know waht was wrong with them. I thnk that batch of Baking Soda has to much something in it.

      I would have returned it to the store and gotten another box. Not your fault there was something potent included.
