What is your favorite kind of cheese? Where do you shop for them at? Is there a good place online to get them if you cant get them near you? I got to looking for bakers cheese to make that cheese cake. I am having a hard time trying to find it. I have one other place to look and then I will have to find a place to order it.

My favorite cheese is goat cheese followed closely by Muenster. I can find lots of cheeses at my local Wegmans. I'll check with them about the baker's cheese - they can find almost anything in the world you'd want.

They are finally building a Wegman's about four minutes from where we live. Yay. I like Muenster cheese but I call it Monster Cheese. Really like Brie, Boursin, Swiss, all pizza cheeses, Cheddar and Gueyere.

My kids call it the same I love Wegmans for the things I can't find easily, but they are so BIG it can get tiring if you need to backtrack to find things you missed. A real workout!

Oh, and Swiss! How did I forget that? It's my favorite for grilled cheese.

I have a kroger, a walmart, a savalot (where I find the good queso cheese) and a locally owned store, oh an an Aldis and apiggly wiggly if I go to the town on the other side of me in Alabama. I am not liking the grocery options here at all. I decided I am going to get stuff of the internet if at all possible so my kids can have more choices.

Just got this answer in a newsletter on how to make bakers cheese and had to share!!!

BAKER'S CHEESE (On the market, you may also find it under the name "cooking cheese" or "white cheese" or dry cottage cheese, such as ricotta.)

Following this recipe for the cheese is my recipe for "Milwaukee Cheesecake" along with some background on how I got into this cheese. Baker's cheese is made from skimmed milk so it is a natural for powdered milk. This is the procedure for about a pound of cheese from a gallon of milk.

    1. Mix up a gallon of milk from powder. I used one gallon of water and 388 grams powdered milk. Alternatively, use a gallon of 1% milk.

    2. Heat to 90F and add 1/8 tsp EZAL culture or whatever you use as equivalent.

    3. A few drops of rennet in 1/4 cup water is added to milk.

    4. Let sit for 8 hrs if you can keep the temp at about 90F or overnight at room temp. Actual target is pH of 4.5 if you have a way to measure it.

    5. Pour curds and whey into cheesecloth lined colander and then hang up to drain for 15 minutes.

    6. Press bag lightly between boards and drain until "moist but not wet". This take about 2 hrs.

The cheese can then be refrigerated till needed. It is also, one of the few cheeses that freezes well. schmidling.com/cres.htm#baker

Hope this helps others as it has me.

I'd like to kiss whoever it was that discovered how to make cheese. Wouldn't he or she be surprised at what a hit this food group has grown into. Say Cheese

I love the stinky type of cheeses with strong tastes. My favorites are: Manchego, Queijo da Serra, Ilha, Tomme de Savoie and gorgonzola

Are these cheeses at the Safeway chain? Thanks SOfia and Greg for these suggestions. I love cheese but tend to purchase the same flavors.

Theresa, humm... not sure, most likely gorgonzola and Manchego are as they are very main stream already. I would be very surprise the two Portuguese (Ilha & Queijo da Serra) are not unless you live close to a Portuguese community. The Tomme, you may easily find it at a cheese market.

I was visiting Wisconsin one time and got this extra, extra sharp cheddar cheese and when we open it up it about knocked you out of the room. At first we thought it may have gone bad but we went back to the place we bought it and asked them and they said it was fine all their extra, extra sharp cheddar was like that so we tried it and it was delicious. I had never had cheddar with a strong oder like that.

I like milder cheeses, mostly, brie, goat cheese, havarti, but I also like a nice sharp cheddar, even a white cheddar and even a gorgonzola. I think cheese is a fine food!

I don't really have a favorite per se. I use a lot of goat cheese, parmesan, chedder, and gruyere in things I make though. I'm so pleased to live in an area where I can find more than the supermarket slabs of cheddar and swiss! If I want really hard to find cheeses we have a great specialty supermarket called A.J.'s where I can always find great cheeses (they even have a professional cheesemonger!) Most of the time I buy my cheese at a local organic market which carries a lot of interesting varieties. If I need something really exotic we have a wonderful market on the other side of town that specializes in food items from around the world.

Cheesemonger sounds like a nice job title. I wonder how many cheeses a cheesemonger would know about. Now I shall find one and ask. perhaps Whole Foods would have one of these tasty individuals.

I've never seen a true Cheesemonger at a Whole Foods but perhaps they do have them in some areas. I love A.J.'s because they also have a Sommelier on staff who gives great recommendations for food pairings within your budget. It's also one of the few places that still has actual butchers and fishmongers too. I love shopping there when my budget allows.
