I love A.J.'s because they also have a Sommelier on staff who gives great recommendations for food pairings within your budget. It's also one of the few places that still has actual butchers and fishmongers too. I love shopping there when my budget allows. :)</p>]]></description>

				<description><![CDATA[<p>I don't really have a favorite per se. I use a lot of goat cheese, parmesan, chedder, and gruyere in things I make though. I'm so pleased to live in an area where I can find more than the supermarket slabs of cheddar and swiss! If I want really hard to find cheeses we have a great specialty supermarket called A.J.'s where I can always find great cheeses (they even have a professional cheesemonger!) Most of the time I buy my cheese at a local organic market which carries a lot of interesting varieties. If I need something really exotic we have a wonderful market on the other side of town that specializes in food items from around the world.</p>]]></description>

				<description><![CDATA[<p>I was visiting Wisconsin one time and got this extra, extra sharp cheddar cheese and when we open it up it about knocked you out of the room. At first we thought it may have gone bad but we went back to the place we bought it and asked them and they said it was fine  all their extra, extra sharp cheddar was like that so we tried it and it was delicious. I had never had cheddar with a strong oder like that.</p>]]></description>

I would be very surprise the two Portuguese (Ilha & Queijo da Serra) are not unless you live close to a Portuguese community. 				<description><![CDATA[<p>Just got this answer in a newsletter on how to make bakers cheese and had to share!!!<br />
<br />
BAKER'S CHEESE (On the market, you may also find it under the name "cooking cheese" or "white cheese" or dry cottage cheese, such as ricotta.)<br />
<br />
Following this recipe for the cheese is my recipe for "Milwaukee Cheesecake" along with some background on how I got into this cheese. Baker's cheese is made from skimmed milk so it is a natural for powdered milk. This is the procedure for about a pound of cheese from a gallon of milk. <br />
<br />
1. Mix up a gallon of milk from powder. I used one gallon of water and 388 grams powdered milk. Alternatively, use a gallon of 1% milk. <br />
<br />
2. Heat to 90F and add 1/8 tsp EZAL culture or whatever you use as equivalent. <br />
<br />
3. A few drops of rennet in 1/4 cup water is added to milk. <br />
<br />
4. Let sit for 8 hrs if you can keep the temp at about 90F or overnight at room temp. Actual target is pH of 4.5 if you have a way to measure it. <br />
<br />
5. Pour curds and whey into cheesecloth lined colander and then hang up to drain for 15 minutes. <br />
<br />
6. Press bag lightly between boards and drain until "moist but not wet". This take about 2 hrs. <br />
<br />
