What is your favorite ingredient in Gumbo?
I find it intresting that every gumbo I have ever had has something diffrent in it.
My personal favorite is the seafood gumbo with out oysters.
But I have had chicken and sausage gumbo, seafood,I even had one with hambuger meat in it.

    I like adding crab to my gumbo. Gives it a great flavor.

    Seafood gumbo with out oysters is like a day without.....oh you know the rest. LOL Shrimp and oysters are my favorite ingredient in gumbo.

      I love oysters it is just that they are extra slimey if in gumbo. I loved them on the half shell, and fried the best

      I'm with you! I adore the okra and peppers. I do the 'unacceptable' and add roux, file powder and okra to mine. I guess for purists, you shouldn't do more than one thickener - I learned that way, though and I've been told I should bottle and sell my recipe!

      My favorite is shrimp and sausage, but I make chicken more often for frugal reasons.

    I remember eating bowls of chicken gumbo when I was a child but I do not remember liking it. It may have been from a can so it wasn't a true representation of a true gumbo.

    I should find a recipe here and try out a more culinary advanced combination and perhaps I will change my was of thinking about gumbo. I love fish, clams, oysters,shrimp; so a seafood gumbo recipe is what I will make. Any suggestions?

    No Okra.

    I don't think that you can make a real gumbo without okra. Isn't that kind of like saying Stroganoff without sour cream? Correct me if I'm wrong but I always thought that it was just a integreal part of the whole. Maybe thats what you didn't like about it when you were younger Theresa.

    Shrimp would have to be by favorite ingredient single ingredient. Yumm

      I've always thought that, too - but when I was doing recent research for a project, I found several sites that stated it wasn't always part - I think that's just wrong, personally. I agree, it's not the same without.

      The word gumbo comes from an African word for okra, so to me if okra is not in it, it's not gumbo. "Gumbo crab", which is cleaned blue crab still in shell, is a necessity for authentic flavor, at least that is what I have learned from my cajun friends.

    Smoked duck and andouille is one of my favorite go-to gumbo combinations. We also sometimes boil eggs in the gumbo.

    In South Louisiana (where I'm from), okra is not always used in our gumbos.

    The distinguishing broth. There isn't any broth quite like the taste of authentic gumbo.
