    Tonight I am going to make fresh dandelions. I haven't decided how I will prepare them yet...still thinking. For dessert I have decided to make a strawberry tart. I am looking forward to this strawberry tart. I found the recipe in an old cookbook that I bought this weekend at a garage sale. The recipes look so good!

      Theresa, My mom used to make the dandelions in a salad or sometimes cooked with garlic and olive oil and spaghetti.

    Today I am cooking baked chicken because my kitties threatened to 'cattack' me, if I didn't. We all love baked chicken. They and I are well pleased. Also had a great green tossed salad with lots of salad additions. Meow.

    Chicken breasts roasted with salt, pepper and fresh rosemary. I put in a package of chicken livers among the breasts and I've got my two favorite pieces. I brown the chicken in a hot skillet with the seasonings first and Pam olive oil spray, then I pop the pan in the oven at 425 for 10 min., and turn the heat down to 350 to finish off. I use large breasts, so it usually takes an hour in all. I serve with a spring mix salad and mashed potatoes with butter and sour cream. This usually makes three or four meals for me.

    Today I am cooking shrimp marinara, snap peas and I will fix the rigatti *spelling* pasta and this time I will cook it a lot longer than the instructions call for.

    Tonight baked split chicken breasts, dipped in Bertolli's Garlic Alfredo Sauce. Salt & Ground pepper, Italian herbs and breadcrumbs on top. Baking right now. Also roasted garlic cloves, grape tomatoes with oilve oil, salt, ground pepper, fennel and celery seeds and a little Italian bread crumbs sprinkled on top. If they had been wings cook time 24.5 minutes but because these breasts are large, it will take min 42 minutes. But it's worth the wait. Will pour a glass of sparkling zinfindel that has been in the fridge since October ... chilling. Cucumber and Mozzarella salad.

    Today I cooked stuffed pork chops b/c its been a while since i made them along with sweet potatoes sprinkled with chopped pecans and brown sugar and a cabbage casserole. Also baked cupcakes just because I like sweets and coffee afterwards.
    The good news is that it was all very good.
    The bad news is that I am back to my evil ways.
    What do I mean?
    Eating to much of the good stuff makes me fat.

      I know! I find I haven't exercised and I eat at the wrong times and I sit in one position for hours and hours. Help.

      I miss pork chops. Joe doesn't eat meat and I love them fried with mashed potatoes and gravy. My sister makes the most delicious ones. Your meal sounds like it was absolutely satisfyingly delicious. Good to see you again!

    Today I'm having tuna salad. I know it sounds boring compared to the others but I'm too lazy to go to the store so I'm shopping in my pantry.

    I'm putting spicy shrimp and scallops in with the regular tuna salad ingredients but substituting greek yogurt for mayo/sour cream. I'll put the mix on whole wheat bread.
