I am interested in healthy cooking and tips and tricks people use to cook healthier. With spring coming and fresh vegetables just around the corner I am starting to get excited about cooking again. What is your favorite healthy cooking tip or trick?

Lately, I have been using olive oil more than butter for my pasta dishes. Sauteing more vegetables to include in my meals. -
I too use olive oil for just about everything, but that is also a staple in Portuguese food.
With the better weather approaching here are some meals I love to make: Tabbouleh, black eyed peas salad with tuna and onions, green beans salad with boiled eggs, lettuce wraps (just add whatever you would in a normal sandwich, but instead use lettuce leaves), lots of grilled meats and fish. Cold water with a few lemon drops, homemade Popsicle (I blend all types of fruits mostly berries, a little honey, non fat yogurt, then pour it in ice cube trays or special Popsicle trays) -
I do not add salt to my cooking. I find that so much of our food already contains added salt. I recently learned that even our chickens are injected with salt, so that they will be more plump. (unless you buy the organic) I find that lemon can take the place of salt. I also us alot of different spices. Spices are good for you and can take the place of salt. It is also fun experimenting with the diferent flavors of the world.-
so very true! coming from a country where we use a lot of salt, you are totally right. I also love use lemon juice and spices, garlic in everything which compensates for the salt. The only thing I still HAVE to use thick sea salt is when grilling fish.
Talking about lemons, has anyone ever tried to stuff a lemon with a few cuts to allow juices to flow inside a chicken then broil it? Love that

So today we had three cheese mushroom scrambled eggs, homemade bread toasted with butter, one strawberry and one-half orange, and coffee with one sugar and coffeemate. Now I am drinking a coke. Was I good and if not, where did I go wrong?

First I do not have a medical background or am I a nutritionist so I am not sure I am going to get all of the terms, etc correct, but here is my response. My experience comes from creating a diet and work out program that helped me lose 125 pounds, in the process of doing that I researched all kinds of diets and ways to lose weight.
I think fasting is very dangerous and should not be done. It won't work as a long term solution weight loose solution. First your body requires a certain amount of nutrition everyday, when it does not get that it starts shutting down and goes into "starvation mode". When in starvation mode your body stops burning calories and starts saving them. When you start to eat again the calories are saved and not burned until the body comes out of the starvation mode. Secondly by not eating your body's electrolytes can be thrown off. Messing up your electrolytes can lead to such things as muscle cramps to heart attacks. I don't think losing a pound or 2 is worth the possible consequences.
My research showed the obvious take in less calories and burn more was the best method. I will typically eat a breakfast of juice, high fiber low sugar cereal with yogurt on it. I may also add some fruit to that. For my mid morning snack I eat string cheese with whole wheat crackers or celery with peanut butter. Lunch is usually a sandwich with a good protein (tuna no mayo but maybe a drizzle of olive oil some tomato and red onion or peanut butter low fat or natural) with carrots and a fruit. Mid afternoon snack is a banana or apple. For dinner I eat whole wheat pasta with grilled or sautéed veggies or 3 oz of salmon grilled or baked or poached with veggies and brown rice. As an evening snack I would eat humus with veggies or whole wheat pita or baked crackers. -
PS I forgot to mention if you are not sure about the calories you need in a day and want to see sample menus go to www.mypyramid.gov/ this is where I got most of my information when I started my diet. You have to burn 3500 calories to lose 1 pound, you can do that by eating 500 calories less each day or add some exercise some and cut back on just 1 food item.
The other part of my weight loose was exercise. I know most people don't have time to go to the gym and I have never went to a gym. I started walking a 1/2 mile every day. Eventually I walked faster and went farther in the same amount of time, then I added another 5 minutes and went a little farther and faster. Now I do 2 miles on my short walking days and I add stretching and lite weight lifting. On my long walking days I walk 4 miles. -

What I notice about my eating habits and your eating habits is that I eat a lot less but more fattening foods, whereas you eat a lot more but consume mush less calories. Exercise is my goal, too. I will get on my Tony Gazelle today and eat smaller portions.

By eating more often, but less calories your metabolism works more burning more calories. In a typical 3 meal day you eat and your metabolism goes for 2 to 3 hours and then slows down. By eating more often there is always something there to burn so it never really slows down causing you to burn more calories during the day.
I also don't believe in any "diet" that limits your carbs, protein or limits anything. You need a variety of all food groups so your body gets all of the vitamins, minerals, etc that it needs. In fact I am not opposed to eating chocolate as long as you keep the portions small and eat healthier foods on the day that you eat the chocolate. A piece of pie or cake does not have to be 1/8 of the pie or cake as traditionally served. When people get a craving studies have shown the first bite is the most satisfying and by the 5th bite all of the craving is gone. So sometimes 2 or 3 bites will fulfill your craving and won't be as hard to recover from as eating 1/8 of a cake. -
Okay, so today I started off with naval oranges and I squeezed orange juice, but I included the pulp in my glass, too, so I could chew my drink. Next one and one-half blueberry pancakes, one strawberry and one small cup of coffee. I am stuffed! Now off to work .... up the spiral staircase.

You have figured out another tip. Write down everything you eat, this helps you track calories. You would be surprised how many things you eat with out thinking about it. A lot of people also write down the mood their in as it helps you realize what triggers your eating. Some people eat when they are mad, bored, sad, etc. Eventually you will see a pattern that you can break once you figure out what triggers your eating besides hunger. -
I ate three TBSP of shrimp salad, four salt and pepper potato chips, 4 ounces of lemonade and a coke. one-half baked chicken breast with the skin. and now I am going to eat two scoops vanilla bean ice cream and lots of water. I used to eat four or five scoops. I am being pretty good ... yes?

If you are eating less than before that is a step in the right direction. Shrimp is low in fat but high in cholesterol, but it is the good kind so it is considered a good "diet" food. The other things in the shrimp salad may push it towards the bad side but I think there are a lot of worse things to eat. Lemonade and coke get their calories from sweetener so they are empty calories (no nutritional value) try to get low cal versions or drink water and tea, but not the bottled kind with lots of sugars. The chicken breast is good but would be better without skin. Ice cream is again all calories and no nutritional value, so look for the low cal versions, there are some good ones out there. I like Skinny Cow ice cream products (fudge bars, ice cream sandwiches etc.). If just switch to low fat versions you will save over 500 calories today. If you save 500 calories a day you save 3500 in a week which equals 1 pound lost. Doctors consider 1 to 2 pounds a week to be a good rate to drop weight. I don't know what you normally eat so what you listed here may add up to more than 500 calories. When I started my life style change the first month or so was switching high calorie foods for healthier versions. Then the next couple of months was trying different versions of low cal foods until I found things that I liked. So just keep doing what you are doing. -
Yesterday, I had a fruit (banana, orange and blueberry juice) smoothie. Dinner at a restaurant: 4 scallops, 4 smallish tomatoes beneath the scallops, and creamed spinach w/ a tbsp of crumbled bacon bits. 6 chips and spinach dip as an appetizer. 1/4 slice sourdough bread w/ butter. 1Oreo cookie 1 1/2 cups coffee, ice cream and 6 salt & pepper potato chips. water.

Theresa you sound like you are putting a good effort into being aware of what you are eating. Bravo! I am right beside you trying very hard also. We must give each other incouragement. It is difficult, but remember we can do this. It is all about being aware. -
Yesterday morning I didn't have coffee. I had a small microwave rigatoni w/ tiny bits of chicken. Water, 1 coke, and for dinner, a pasta dish w/ vegetables and a small portion of ground beef mixed in. More water. -
Okay Greg, here goes ... Today I had a cup of coffee, and ate 1/2 naval orange and 1/2 banana. Then I fixed 7 vegetable pasta dish (w/olive oil + 1 TBSP butter), and drank a coke. I am going to eat vanilla ice cream 2 scoops and drink a lot of water.

Yesterday afternoon I ate the 2 helpings of leftover pasta, 1/2 orange, a cup of coffee. Water, 3 milky way tiny portion candy bars and 1/2 medium(movie size) cherry coke. then we went to dine at Thai place and I ate 6 1/2 pieces of chicken wings, which were cooked like cardboard and water and three TBSP of white rice.

Sorry I haven't been around, my brother drove from MI to NC to see me this weekend. And I do mean just for the weekend he got here early Saturday and left Sunday morning. I didn't know he was coming until Friday night and had to do a few things to prepare. Like tear down my old treadmill so he could take it back to MI with him. I think I am the only person who has ever sold a treadmill for 20 pounds of dried MI cherries. Now I have to come up with some dried cherry recipes.
Theresa as of 5:30 today the only thing you ate is left over quiche. When you eat only once a day your body will not burn the calories it will save them. You are better off taking that large portion and dividing it into 2 or 3 smaller servings and eating them every 3 hours. This will keep your metabolism going and thus burn calories.
I don't know if you are weighing yourself, but I recommend it. But then I also want you to measure your arms, thighs, waist and neck. Do this every week. A lot of people are upset when they don't lose weight but they never bother to measure their bodies. I found a lot of time when I lost very little or no weight that I dropped inches. Also measure both right and left arms and legs because they will lose at different rates. Inches are as important as pounds so if you lose one way or the other you win. And every time you win you will feel better and be encouraged to keep going.
Remember you did not put on the extra weight in i night, 1 week or 1 month and it will not come off in 1 night, 1 week or 1 month. Permanent weight loss is a long term goal and there are no shortcuts. -
Good advice Greg..Keep up the good work Theresa. I am trying too. I know I get a little disgusted because it is a long slow process, especially when you think of it in terms of pounds.-
I know it's a slow process it took me 2 years to get to a good weight. What I did to keep it interesting was make games out of it. I would try to go farther in less time when walking or when cooking try to combine new flavors or take something traditional and combine the ingredients into something new. I just kept trying to keep it interesting or a challenge to keep me engaged.

Today 1 bowl sugar crisp cereal w/ milk. One small portion leftover quiche and two tablespoons leftover Brussels Sprouts, one coffee, one coke. Dinner tonight will be roasted chicken and mixed veggies sauteed. Water. -
Theresa today I had "so far" 2 slices of Amercian cheese melted on a tortilla and a cup of coffee with milk. I will keep you posted as to what else. -

The taxes didn't taste very good at all!
We went to Outback I drank Three glasses of water to go with the (hot!) spicy sauce for my fettucini and 6 grilled shrimp. A crispy garden salad and only one small slice of brown bread with butter.
A half of an avocado for dessert and one tiny milky way candy. Raspberry cherry juice.

Today I feel like I had alot to eat! I had a left over hamburger with the ends of the white bread, at about 10:30am, with a cup of coffee. I had two oranges in the afternoon. I LOVE oranges. Then, Theresa, for dinner I had a few pieces of left over lamb, some oven roasted peppers, cranberry sauce and a cup of coffee. I also went for a long walk. -
I think LadyGourmet and Theresa111 should judge each others food selections for a couple of days. Get a feel of what it is like picking healthy choices that are outside their normal selections. I learned to eat a lot of new foods while I was on my life style change. -
Today 1/8 cantaloupe, one coffee, 1/2 cup raspberry cherry juice, 1 bowl of angel hair pasta with sauteed onions, red cabbage, a little green cabbage and 1/4 avocado. I wanted to order pizza or a sub or chicken wings, or even Chinese food. Instead I brought out the big saute pan.

Today ... coffee, 1 slice toast w/bitter. A very small portion spaghetti w/ butter and salt. Later tonight few pieces chicken wings, one meatball with a little sauce and tossed salad w/ drizzle of olive oil. Lots of water and raspberry cherry juice during the afternoon and into the evening.

I just published a new Skinny Tipper recipe. I have to get that site set up here. I would publish the recipes, but this seems like the hardest site to publish recipes on of all of the sites I publish at. It is also the only one where they don't publish them right away, but make you wait. I have a couple more I am trying to get published this week, but time is limited as my best friend is here from Thailand, so I am trying to spend time with him.
You have inspired me to try to loose a little weight again. I have been messing with my exercise routines trying to find the right combination of cardio, strength and stretching. Keep up the good work and keep watching for your next tip. -
I do agree about the site being the hardest to publish recipes on. I have been trying some new ideas like freezing banana's, as they defrost they are very creamy and delicious. I am glad that Theresa and I have inspired you to also get healthier. I think I have lost about 2 pounds, but still feel very discouraged. I feel like I have been trying and 2 pounds just is not very much. I shall not give up though. I continue to walk about 45 minutes each evening. My little dog loves it. -
You shouldn't feel down, dropping 2 pounds means you cut back 7,000 calories. A doctor will tell you that you should never lose more than 2 pounds in a week. When I started out I always walked my dogs, then I cut back to just one because the other one was slow. Eventually I dropped the dogs because I got tired of stopping while they smelled things. My wife walked them though.-
Thank you for that encouragement. I have cut back and I am much interested in my choices. I have stopped using half and half or light cream in my coffee. I just use regular milk now. I am also making a effort not to eat bread at more than one meal a day. Thank you again for your help. It is greatly appreciated. I am going to try to loose this extra weight. I think that I didn't really put an effort because I don't think we see the extra pounds we just get used to them.

Good for you Catherine! I could not go for the milk in the coffee but I do understand about getting used to carrying around the excess pounds. I finally became uncomfortable with this excess weight and slowly but surely it's coming off. Cutting back is the first defense line and telling what you eat to another person makes us accountable. I need to get on the exercise equipment TODAY and stop procrastinating.
Yesterday: Tossed salad w/little olive oil. Large shells w/mushrooms, onions, Five shrimp scampi w/butter and crushed garlic, marinara sauce and steamed green beans with onion , butter salt and pepper. 2 cokes, no coffee, raspberry and cherry juice, no water! 1/2 (last slice) of the triple choc crm pie, and 8 hours later 1/3 cucumber w/ olive oil salt and pepper and a 1/2 bowl of shells and sauce. I was particularly hungry OH my sister brought us fudge from her trip to Tennessee (we watched her kitties), and I did eat a very small slice, really small. It was from a real chocolatier! Who could resist?
Today: Coffee. Later salad, ground round burger w/lettuce only. Later tuna in water and green beans. Water, water, water. If I deviate from this I promise to fess up.

Dear Theresa, You sound very dedicated. Good for You. It is a good feeling to take some control. I think that this sometimes is difficult, simply because it is such a slow process. There is a need for constant motivation, which sometimes seems to dwindle. -

Tonight: Salad, brussels sprouts, 1 cup noodles and 1/2 sauteed chicken breast. That's it.

I LOVE open-faced grilled 90/10 hamburger patty with lettuce instead of buns and pile it with veggies-tomato/fresh slices of cucumber instead of pickles with olive oil mayo (okay, only one slice of provolone cheese). Yum!
It's "what's for dinner" tonight! -

Theresa I miss sharing our meals on these posts. I haven't a chance to post what I have been eating, but I think that I am doing well. You sound like you are really doing a good job. Keep up the good decisions.-
Catherine have you noticed I blanked out for a few days? I was so naughty. Should I go and pick out a switch now? Sometimes my Mama (grmthr) would tell me to go outside and pick out the switch she was going to slap against my legs. I would cry all the way there and back. Ha! I deserved them plus some.

Theresa, you are wrong about deserving the switch. Most people don't stick with "diets" because of the guilt and shame associated with cheating. You have to look at this as a life style change and your change is that you are going to eat better. That does not mean that you have to eat healthy 100% of the time. If you stray from your goal, then you have to refocus and try again. Look at it like an athlete, no athlete scores every time they have the ball, get to bat or win every race they run. You just have to try harder at the next meal. I know people who have lost weight by eating right every day but on Saturday evening they have a free for all, they may eat a burger and fries or whatever your weakness is. By planning the one meal they are going to cheat on they are motivated to stay on track the rest of the week. They also have a rule that if they cheat during the week they lose their Saturday night free for all. The important thing is to not give up completely concentrate on losing X amount of weight and keep working for that goal.

Yesterday Coffee: SATC2 Movie Chocolate chip cookie ice cream sandwich (mmm) Coke, Lunch @ Applebee's Sampler I split w/ HIM. took home the five chicken nuggets (giving them to the kitties today) so, two quesedillias, two shrimp, four celery sticks, 3 mozarella fried sticks w. marinara, artichoke and spinach dip with tortilla chips (tweleve) grape and peach juice. Water.So in reality not too much and am sure I hit alll of the food groups.

Today Coffee ... later scrambled eggs w/ Monterrey Jack Cheese w/ specks of jallapeno peppers. Healthy Choice Lemon Pepper Fish Dinner. Pickels. A few chicken breast slices. (that's the plan).
What are you eating today? I find I am seeing a real pattern to how I eat. Yeah. Uh-oh.-
Theresa don't feel bad. I think that you are doing great just because you decided to try to eat healthier which as a result means that every time you eat you are "thinking", even if you cheat you are thinking otherwise it wouldn't bother you. So, as we used to say "lighten up!" on yourself and have some fun. You will make good choices most of the time, and when you don't your choices won't be so bad because you are making conscious "cheating" choices. Somehow I jsut know that you will follow my logic. Next. I am baking bread and we will have chicken (for the kitties) and I will defrost some king crab and jumbo shrimp for a little stir fry, later on. -
I've found that making anything yourself is infinitely "healthier" than pre-made. Reading labels is a real eye opener when you know what it takes to make a dish and then look at the pre-made version in the grocery store....
I really have never cared for the food nazi mentality, though because it tends to suck all the joy out of life by creating feelings of stress around the most basic enjoyment in life which is food. -

I made a cake once and used olive oil. The cake seemed to have a richness to it that you don't get from vegetable oil and you couldn't taste the olive oil. I am not a baker and since it turned out well I never told anybody figured I would just make them wonder why the non-baker baked a better cake then they did. -

Olive Oil Cake

Ingredients
1 cup fresh orange juice
1 teaspoon fine salt
3 large eggs, room temperature
1 1/4 cups whole milk
2 cups sugar
1/4 cup orange liqueur, rum, brandy or whisky
1 1/2 cups extra-virgin olive oil, plus more for oiling pans
1 tablespoon lemon zest
2 teaspoons anise seed
2 teaspoons finely chopped fresh rosemary leaves, divided
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
6 tablespoons lemon or orange marmalade
2 fresh rosemary sprigs, for garnish
Directions
Preheat oven to 350 degrees F. Oil 2 (10-inch) round cake pans.
In a nonreactive saucepan, reduce the orange juice over medium heat to 1/4 cup. Add salt, stir, and let cool.
Lightly beat eggs with paddle attachment in standing mixer on high for 1 minute until frothy. Add milk, sugar, liqueur, olive oil, reduced orange juice, lemon zest, anise and 1 teaspoon rosemary. Mix for 1 minute until well blended. Mix in the flour, baking soda and baking powder until well blended and smooth.
Pour half of the mixture into each oiled cake pan. Bake for 1 hour. Place on a rack to cool. Run a knife around the edges and place it on a plate. While the cake is still warm, smooth 3 tablespoons of marmalade onto the top of each cake. Sprinkle remaining 1 teaspoon rosemary evenly over both cakes. Garnish center with rosemary sprig. Cut each cake into wedges and serve. -
In the past two years I've substituted Olive Oil (for baking and sauteing) for veggie oil in muffins, quick breads and pancakes. They have an even better taste and are moisty even after frozen & defrosted. Can you tell I bake in double batches and freeze goodies whenever possible? Yes, I have a large freezer downstairs that has come in very handy over the years.

I ate a slice after it cooled. I held in in my hands and took a bite. Between the taste and the texture, it reminded me of egg tofu mousse, inside little pockets within the meat of the vegetable. I do not care for tofu, but this was quirky enough for me to like. I'm buying more on Thursday. Now ... if I could get me some squash flowers I'd be very happy.
I have been thinking more and more lately about becoming a mostly vegetarian.

Sure. DaniPrice ... We purchased it from an infomercial Montel William Living Well. We upgraded to the super duper model but it was really overpriced, in my opinion. Looking back I think we were half aseep when we were watching it. IT does perform quite well and I just wanted you to know about the cost.

We went back to Butler's Orchard yesterday afternoon and really looked around. We haven't even been outside to the orchard yet. We'll likely go thee when it cools down. They were showing people how to dig up potatoes and it sounded like a lot of fun.

Last night huge salad with lots of veggies on top. Small NE Clam chowder (no crackers) seven fried shrimp. Cola, Two scoops vanilla ice cream.
Today: Orange juice, coffee, banana. Lunch: Porterhouse steak & mushrooms. Water. Orange. Tonight: snow crab, 1/2 cup cooked orzo, green beans tiny slice apple tart.
Exercise: Walking 30 minutes on my Gazzelle. I am back into a routine. -
I love cooking healthy, i was raised that way and now i cook for my family the healthiest as i can but always looking for more! One thing i found to improve my ground meats esp. beef, turkey, and chicken is i boil the ground meat til no more pink and all the nasty stuff floats to the top. Then i pour if off and rinse a few times from there cook as usual. -
I was told by my physician I have to watch my carbs and sugar intake. Apparently she doesn't realize that a baker likes the rich foods. Well, I have been told and I shall prevail. Sauteed vegetables with olive oil and lemon squeezed. A fresh simple salad and water, water, water. Greg you'll be proud of me. I also bought a salmon and as soon as my tummy settles down, I will bake some. Oh, I am also to watch the fried foods. I suppose I really shouldn't have spoiled myself so. Oh well. I'll be good. I'll bake and give it to the neighbors.
