				<description><![CDATA[<p>I was told by my physician I have to watch my carbs and sugar intake. Apparently she doesn't realize that a baker likes the rich foods. Well, I have been told and I shall prevail. Sauteed vegetables with olive oil and lemon squeezed. A fresh simple salad and water, water, water. Greg you'll be proud of me. I also bought a salmon and as soon as my tummy settles down, I will bake some. Oh, I am also to watch the fried foods. I suppose I really shouldn't have spoiled myself so. Oh well. I'll be good. I'll bake and give it to the neighbors.  :P</p>]]></description>

One thing i found to improve my ground meats esp. beef, turkey, and chicken is i boil the ground meat til no more pink and all the nasty stuff floats to the top. Today: Orange juice, coffee, banana. Lunch: Porterhouse steak & mushrooms. Water. Orange. Tonight: snow crab, 1/2 cup cooked orzo, green beans tiny slice apple tart. <br />
<br />
Exercise: Walking 30 minutes on my Gazzelle. I am back into a routine.</p>]]></description>

Between the taste and the texture, it reminded me of egg tofu mousse, inside little pockets within the meat of the vegetable. I do not care for tofu, but this was quirky enough for me to like. I'm buying more on Thursday. Now ... if I could get me some squash flowers I'd be very happy.<br />

				<description><![CDATA[<p>In the past two years I've substituted Olive Oil (for baking and sauteing) for veggie oil in muffins, quick breads and pancakes.  They have an even better taste and are moisty even after frozen & defrosted.  Can you tell I bake in double batches and freeze goodies whenever possible?  Yes, I have a large freezer downstairs that has come in very handy over the years.  :)<br />

Olive Oil Cake<br />

Ingredients<br />

1 cup fresh orange juice<br />
1 teaspoon fine salt<br />
3 large eggs, room temperature<br />
1 1/4 cups whole milk<br />
2 cups sugar<br />
1/4 cup orange liqueur, rum, brandy or whisky<br />
1 1/2 cups extra-virgin olive oil, plus more for oiling pans<br />
1 tablespoon lemon zest<br />
2 teaspoons anise seed<br />
2 teaspoons finely chopped fresh rosemary leaves, divided<br />
2 cups all-purpose flour<br />
1/2 teaspoon baking soda<br />
1/2 teaspoon baking powder<br />
6 tablespoons lemon or orange marmalade<br />
2 fresh rosemary sprigs, for garnish<br />

Directions<br />
Preheat oven to 350 degrees F. Oil 2 (10-inch) round cake pans.<br />
<br />
In a nonreactive saucepan, reduce the orange juice over medium heat to 1/4 cup. Add salt, stir, and let cool.<br />
<br />
Lightly beat eggs with paddle attachment in standing mixer on high for 1 minute until frothy. Add milk, sugar, liqueur, olive oil, reduced orange juice, lemon zest, anise and 1 teaspoon rosemary. Mix for 1 minute until well blended. Mix in the flour, baking soda and baking powder until well blended and smooth.<br />

Pour half of the mixture into each oiled cake pan. Bake for 1 hour. Place on a rack to cool. Run a knife around the edges and place it on a plate. While the cake is still warm, smooth 3 tablespoons of marmalade onto the top of each cake. Sprinkle remaining 1 teaspoon rosemary evenly over both cakes. Garnish center with rosemary sprig. Cut each cake into wedges and serve.</p>]]></description>

				<description><![CDATA[<p>I made a cake once and used olive oil. The cake seemed to have a richness to it that you don't get from vegetable oil and you couldn't taste the olive oil. I am not a baker and since it turned out well I never told anybody figured I would just make them wonder why the non-baker baked a better cake then they did.</p>]]></description>
