What's your favorite leftover recipe for all that turkey, ham or otherwise left behind from your holiday meal?

Make a white gravy and add ham to it. Then add a dash of Worcherstershire sauce and serve it over toast points. I do this with the thin sliced Carl Buddig beef during the rest of the year,.

Turkey sandwiches with oyster dressing, mashed potatoes and gravy. Add in a little slice of cranberry sauce, too. Milk.

Dear me, those both look fabulous! Nothing like a little weight gain *after* the holidays, eh?

Turkey ALWAYS gets turned into turkey tetrazzini. I fry up a mirepoix with some mushrooms, add a cup of left over gravy and cream, 2 cups of chopped up turkey bits and then mix it all up with some egg noodles, top it with parmesan and toss it in the oven until its all brown and bubbly.

Ham usually lends itself to soups of all sorts or cassoulet.

Cassoulet makes my heart sing and I adore tetrazzini! Both are great ideas.

My sister, Mary, invited us over Saturday and she prepared a lovely dinner. See my blog for photos. I especially enjoyed the potatoes au gratin leftovers we brought home. I heated them in the microwave and we ate them before going the the movies last night to see AVATAR! and we have some for today. This time, I plan on sauteing mushrooms, onions, grape tomatoes, garlic and avocado (at the last minute), to be combined with them. It'll be a whole luncheon.

Unfortunately, when we got our Irish on over the weekend, we had three extra people show up, so not enough leftovers for corned beef hash (not even a leaf of cabbage was left).

    Freaking wolfpack...
