Natural food coloring

Anyone has any ideas for natural food colorants they have tried. I have done a few and am going to experiment this weekend with red beets for a red velvet cake.

    Purple grapes, tomatoes, yolks, carrots, spinach.

    yes indeed, also raspberries, etc, the trick is HOW to make them in liquid or powder and in such a way that the food then does not taste as the food coloring.

    (shrugs) Other than food coloring these were the only food staining types I cam up with.

    You're going to waste a really nice red velvet cake. Beets don't work.

    lol... Actually did it and came just as with artificial food colorant. Just as vivid. I boiled a few beets with water for about 2 hours. Once the beets were nice and soft I created a puree of the beets and water. I then strained all of the juice out. I added a tablespoon of white vinegar, then used the same amount as if artificial food colorant. I am playing around with various colors to see what works and what does not. I will keep everyone posted in case you are interested.

      I'm very surprised. I had a friend several years ago who did Red Velvet with beets. It was far too purple and the taste was off... of course, being a Southerner my standards of Red Velvet are very, very, very high.

      Did you do a photo? I'd love to see how yours turned out compared to hers.

      Actually, by the time I was to take a photo all kids were all over the cake. But will be redoing it this weekend for Halloween. I was able to save a little piece and brought it to my friend who had given me his Mother's recipe (she is from Texas) he said there was no difference. I also changed crisco for organic shortening, which my friend thought I was murdering his Mother's recipe and still he was surprised. I will make sure to take photo as soon as I cut first piece., then upload it here.

    Lemon, Lime and Orange Zest are natural and when added to dishes, they bring color, texture and flavor.
