Search the recipes under appetizers and you should come up with some very tasty ideas. -
It's not crockpot but they're easy to do and work great for appetizers at a potluck...
Take sheets of refrigerated puff pastry (like Pepperidge Farms) and unfold and roll lightly into a large square. Using a 2 1/2-inch or 3-inch round or fluted cookie cutter, cut out circles. Place circles on parchment lined baking sheet and pierce with fork to within about 1/2 inch of edges. Then scoop about a teaspoon of goat cheese or Queso Fresco onto the center of each. Top with 1/2 a cherry tomato (cut side down) then with a bit more cheese. Bake according to package directions until cheese has melted and browned slightly and pastries are golden brown. Arrange on a platter and serve.
Easy, cheesy!
