    Also www.guittard.com/ you can purchase coverture chocolate. It is expensive and is you want instructions on how to make ganache or truffles let me know. There is an entire week devoted to this in pastry class. You have to handle it so you do not waste it.

    I love the combination of orange and chocolate for eating (I also like it in cooking and often add a bit of orange zest to ganaches).

    Anyway, Lindt makes a very good orange chocolate that you can find almost everywhere and is excellent for a little chocolate therapy right out of the wrapper.

    I love freshly made ganache and it is so easy to make you'd think every cook would give it a try sometime.

    @ parts great chocolate to 1 part heated (just before boil), heavy cream. Weigh the measurements.
    Chop up the chocolate, make a well in the middle, pour the hot cream in and allow to sit for about a minute. Slowly blend (without stiring), together until smooth and creamy. You can add your flavorings right now. Pour into a pan and allow to cool completely, usually until the next day. Do not cover it until it is totally cooled down. Then scoop, roll and chill before making truffles, candies or using the ganache in different recipes. Oh yummy.
