With out seeing the recipe I can't tell you specific tips, but listen to Theresa and Anniepooh. Most popular cheeses have a low fat version now. Use 50% low fat and 50% full fat or some combination thereof. Sometimes you can just sprinkle the real cheese on the top at the end and add the low fat inside, that way you get the flavor without all of the calories. Fruit purees can be substituted for 50% of the fat in a lot of baked goods (applesauce is good for this). A lot of recipes call for way more butter than they need, try cutting back on some of the fat called for. The best thing I can tell you is experiment and read the internet but avoid any sites selling you anything and any sites that make claims like you will lose 50 pounds in a year if you switch to product X.

I try to do things like the lower fat version of any dairy as long as it doesn't affect the integrity of the finished dish. Some things, like Theresa said, are just heavier on fat and need to be eaten in moderation.

You can also try adding more veggies and less dairy.

What are your ways to omit or reduce fat in recipes?
I just made leek tart and even though it seems healthy I could not cut on butter, cream and cheese so it's pretty fattening.
I was wondering what are your ways to substitute fat?
