What are you all making tonight!?

We are having a roasted chicken in herbs on this snowy rainy damp icky evening! I also made some smoked salmon herbed dill cream cheese canapes on pumpernickel They only took about 15 minutes to put together. Anyone have any fun, delicious and easy early Spring recipes you can share with me!

I was playing around recently and did a batter dipped chicken that was baked in the oven. I adapted one of my fish batters (old southern recipe) and dipped boneless skinless chicken breast cutlets in it. Then popped it in the oven. It was delicious with a great breaded crust and since the crust kept in the moisture the chicken was super tender and juicy. -
The other night I baked fish that had been dipped and breaded with shredded potatoes. They were so cute and tasty! Tonight I used my crock pot and made a batch of pasta sauce. I will separate portions and make five different variations over the next ten days. For tomorrow, I'm thinking about getting some oysters and lightly frying them up. Making a yellow saffron rice with tiny bits of red bell peppers, stuffed into acorn squash and then baked with homemade garlic breadcrumbs and cheeses on top. A side dish of stewed tomatoes with basil. Mixing it up is fun. -

Thomas I love stir fry especially when there is tofu in it! Theresa that picture is making my mouth water!!!!, Sugarpies that sounds like the tastiest and moistest chicken dish I have ever heard of. and Theresa the oysters sound great! You have all inspired me!! Thanks!
PS Theresa I love the idea of the royal wedding/fashion...I need a good question..perhaps what would we wear if we were attending the royal wedding!? -

Making a form of pad thai. Couldnt find the ingredients I really needed so I am winging it. I have peanut sauce, coconut milk, onions, garlic, tofu, shrimp, scallops. noodles, and what ever else I think about throwing in. My hubby is having fried pork cutlets and veggies since he doesnt think out side the box when it comes to food. lol -
