My son loves tortillas. Any kind be flour or corn. We made a casserole that I submitted here from a friend of ours that uses them. He eats them plain or as a sandwch rolled up.

The question is what else can they be used for besided burittos, tacos, or rolled up sandwiches? I need inspiration and I know all of yall will have some wonderful ideas.

    You could crunch them up into smaller bite-sized pieces. Melt butter and garlic. Spread the chips on a sheet pan and spritz with the garlic butter and toast for about five minutes in a 375ยบ preheated oven. Sprinkle over whatever you're eating, or as a topping in place of croutons for a salad.

    you can use it as a bowl for a salad. Also cut them into triangles, spread them in a oven-safe tray, sprinkle sugar and cinnamon. A nice little sweet taste to eat just like that or with fruit salsa. I can add the fruit salsa recipe if you would like.

    You can also use the corn tortillas to make stripes with them then fry them (until they are crunchy) and add them to soups!

    There are many different types of tacos and enchiladas, you might want to try them with different stuff in them.... You can also make CHILAQUILES .... What a great idea! I will post the recipe of chilaquiles soon (it is basically frying the tortilla and then adding garlic, tomato, onions, some chopped chili pepper, queso fresco (a white crumbly type of Mexican cheese), Mexican crema (Mexican style cream) and sometimes even chicken.... I have to put the recipe together and I will share it with you.

      I would love the Chilaquiles recipe. They serve them at a gas station down the road with chicken and cheese rolled up really tight and fried. I dont like the cheese they use but my son loves them like that too.

    In Mexico we use it with every meal to "push" the food to our fork... kind of like bread for Americans! I love tortillas!!!

    Slice a litte cheese, put on tortilla, microwave.

    Sramble eggs, add sausage or bacon, put on tortilla for breakfast taco.

    Bake corn tortillas, cut into 1/4 sections, for chips.

    Enchiladas--Roll corn tortillas around something (chicken, shrimp, ground meat), top with a salsa (here's one I make: thomastheaccidentalgourmet.blogspot.com/2009/11/blog-post_27.html), bake.

    My kids love quesadillas - either microwaved or the real deal in a pan (chicken are our favorite). I make all sorts of rolled sandwiches with them family.go.com/food/recipe-644138--ham-n-cheese-ranch-roll-ups-t/ and since they fit well in a round baking pan, I layer them with seasoned meat, salsa and cheese for a quick 'casserole'.

    One of the kids' favorites is chicken nuggets set down the center of a tortilla and topped with cheese and rolled up - chicken nugget wraps

    I also make breakfast burritos when I do an OAMC month - which is rarely these days.

    Make popcorn and toss some tortilla chips in and shake around. Nacho cheese drizzled over the top would taste yummy.

    One of our favorite lunches are Cheese crisps. Take a large tortilla and sprinkle it with loads of your favorite cheeses then bake in a 375 degree oven until the tortilla is crisp and the cheese melts.

    I've even done this using tomatoes and veggies and then sprinkled the top with Feta or Goat Cheese.

      I don't see too much of a difference, but I have people who swear they can taste a difference.

      But to put a fine point on it... Feta can be a combination of sheep and goat's milk or even cow milk in many varieties made outside Greece. Whereas, goat cheese is made completely of goat's milk. Goat's milk tends to be associated more with French foods whereas Feta with Greek.

    opEn and lt dry out a bit, break into pieces and add to chicken and dumplings for the dumplings, makes great "home-made" dumplings. I also have used them with any kind of dried beans as dumplings .

    I was at a restaurant that used tortillas instead of bread or rolls as a side with honey as a dipping sauce. I would think that other sauces, sweet or savory, would be a nice option. Another idea that just crossed my mind - how about using the tortillas instead of bread for cinnamon toast? Perhaps warm a tortilla up, spread with butter and cinnamon/sugar mix and roll up for a snack. I might even try this myself!
