What kind of pumpkin should we use. Walmart had several different kinds to pick from and I have no clue what kind.

    I always use the small sugar pumpkins for cooking. You can use the bigger ones, but they are stringier and more spongy when cooked.

      can you get a sugar pumpkin in a medium size as called for. She wants to do this so I can blog about it.

      They're hard to find over 5 pounds - you may have to dig. A regular pumpkin WILL work - I would do that if size is an issue.

    I was wondering because it said medium pumpkin and I was worried if to small or too big it would mess up the custard when she cooked it.

      It looks like maybe 2 1/2 cups of filling - if you get a smaller sized (think basketball) pumpkin, I think that would work.

    I have a pumpkin, Clyde is his name and he keeps trying to talk me out of cutting him into a Halloween design or cooking him to eat. What am I going to do? I;m starting to laugh at his jokes!

      lol I have seen some this year the size of a house. I want on of those for the seeds. I love roasted pumpkin seeds

      Haven't had any drink but coffee, coke and water. He keeps looking really cute.

      How do you roast pumpkin seeds and how do they turn out white?

      I've posted on this before - the way I do it is to clean them all well and then soak in salt water for 15 - 20 minutes. Drain well and roast on a sheet pan in a hot oven until golden. Shake them halfway through so they don't stick and that's it!

    They wash them and keep the goo off of them. I leave goo and all on them and place them on a cookie sheet and put real butter on them and roast them at 350 until the are light brown. Turning them often so they dont burn.

      They roast them super-slow they are actually not roasted at that point - they are dried.

      no the whole thing. I just scoop it out. Remove the large chunks of string stuff so it doesnt burn and leave the goo and alittle of the string on it and roast them.

      I'm talking about the white pumpkin seeds you have to bite open in order to get to the greenish insides of the seeds. What makes the outside white?

      the way they cleand them and roast them is diffrent and the pumpkin they use. We eat the whoe seed if we roast them and do not pick any thing out.

    i like the flavor with all that stuff on them it has more of a pumpkiny taste to it. Like a roasted pumpkin.

    As for the white they clean them a certain way. When you roast them at home they are not that dried out and tough.
