Tonight I am supposed to be cooking pork chops and noodles. But I think that I've decided to nag my dude to cook instead.
He makes brats very well and then I don't have to do it.

We didn't have them. We ended up ordering subs. Those were fantastic and didn't heat the kitchen or dirty anything up.

It's hot here. A heat wave. This afternoon we got Chinese/Japanese food at a nearby restaurant and then Joe tried to change out the bathroom exhaust fan. 3 hours later, he said the flap doesn't work! Leftover salad and ice cream tonight. Have a great holiday. Fireworks soon.

Tonight I decided to cook after all and I am making Hamburger Helper with zesty hot sausage instead of hamburger.
It is a new variety (to me) -- Tomato Basil Penne.
Quick, easy, and mindless. That's how I like it.

Hello there! Each night is different here - today was the all-American hot dogs etc for the 4th - tomorrow is sausage jambalaya, day after is pancakes and bacon! -
We are going to eat vegetables and microwave some frozen portions of lasagna. It is 99º out and tomorrow 100º Heat wave with no rain in sight. I have to be careful about using the stove or it heats up the condo and I lose my handle on the cool air. I'm calling my sister, Mary, and getting her to do a rain dance with me.
The hot dog would be for me.

Having a family favorite - Grilled Sockeye Salmon, microwaved "Baked Potato" and Sauteed Zucchini. Much too hot to heat an oven. -

I ate tomato & cucumber from the garden (not mine ... I don't have a garden), chicken breast two little slices and orange sherbet & vanilla ice cream. That's it. Didn't feel like cooking much because it's 99ª again. We'll cool off some more on Friday. I want to throw up my hands and say "I can't take it anymore!" I want the cool weather now.

We actually did dinner and movie this evening. Dinner was Applebee's because we love their Maple Butter Blondie. Unfortunately, they burned it. But I got a nice compliment during dinner when Michael said: "It's really not even worth going out to these places because your food is so much better." Ahhh, that was so sweet.

Believe it or not, there's not a bit of butter in the bread. I love them hot with butter melted over the top so that it soaks through the bread.
I actually used Grape Seed Oil in these rolls instead of regular shortening so they're very light and airy. They're the best rolls I've ever had, if I do say so myself. Of course, so far everyone who's had one agrees.

Tonight we did IHOP for supper. Michael likes their Tilapia Hollandaise and I LOVE breakfast for supper so I had pancakes and bacon.

Michael has banned rice for awhile and instead is insisting on potatoes with a lot of meals. So, I've been hard put to do some quick potato recipes - especially today because I'd spent the afternoon getting a big pan of cinnamon rolls ready to bake off tomorrow for a friend who's coming by to visit.
What I finally came up with were Crunchy Potato Wedges (sorry I didn't get a pic):
5-6 red potatoes, scrubbed
1/4 tsp. Kosher salt, plus extra to taste
3/4 cup seasoned bread crumbs
freshly ground pepper, to taste
Red Pepper flakes, to taste
Ground Cayenne (optional), to taste
Oil for frying
Adjust oven to rack to medium position and light broiler. Heat oil to 375 degrees in dutch oven or deep fryer. Slice potatoes lengthwise into wedges and sprinkle with about 1 tsp. kosher salt to help draw out moisture. Fry potatoes in oil until they are lightly brown. Remove from oil.
Line sheet pan with aluminum foil. Place bread crumbs in a small bowl. Carefully dip hot fried potatoes in crumbs to coat and place on sheet pan. Place coated potatoes in oven under broiler. Bake for 1-2 minutes just until bread crumbs are toasted. Remove from oven and allow to cool slightly. Sprinkle with remaining spices and serve.-

Seco de Pollo is a Cilantro spiced chicken with carrots, potatoes, and green peas spiced up with onion, garlic, and yellow peppers (almost like a stew) that is traditionally served over rice or quinoa. Quinoa is an Andean grain that is somewhat like Couscous but Michael loves it much better than Couscous. This Quinoa was seasoned with garlic and onion then soaked in chicken broth and some of the liquid from the Seco de Pollo until it plumped up. Salsa a la Haunaica is a spicy cheese sauce featuring yellow peppers (aji amarillo), garlic, onion, and Queso Fresco cheese. It's great as a sauce for boiled potatoes - which is a traditional use in Peru or as a dip for chips or veggies. -
This was very complex and Michael must love you very much for all of the work that you put into your food. I like the quinoa and at some point will see about getting some. I'm with Michael in that couscous always seems kind of grainy and dryish (to me). Perhaps I have never had it prepared correctly. Thanks ever so much for taking the time to explain the food in the photo!
Oh! And I loved the idea of a cheese sauce over the boiled potatoes.

I just had the fillet mignon section of my grilled porterhouse steak and sliced mushrooms. I have a huge head of cabbage and thick bacon slices. I believe I shall saute them and make some macaroni with Velvetta cheese. (an all-time favorite from childhood. Sometimes I just have to have this).

Since tonight (Friday) is Varsity Football Game night (my son plays) we will probably do a "kid-friendly meal" since our contractor's little son will be hanging out with us while his Daddy is working. My children all LOVE to eat "Captain Crunch Chicken;" which sounds nasty but does have a neat, sweetish taste and is kind of addictive! (Simple to do: Crush Captain Crunch in huge, sealed baggie. Shake boneless, skinless chicken breasts or strips in it after dredging them in either egg and milk or just milk. Place on non-stick sprayed pan and bake at 375f for about 20 minutes or longer -- depending on size and pieces of chicken used.) We will add a big bowl of garlic mashed potatoes and a nice, cool Waldorf Salad with Hawaiian Rolls. Easy and good! Go Admirals! -
It's very funny that I read this tonight - the dinner I made was broiled pork rib chops and homemade vegetable lo mein! -
I need to catch up! Last big meal was Bistro Steaks with Provencal butter, Roasted Autumn Vegetables, Roasted Tomatoes, Savory Palmiers and Cheese Puffs and Lemon Meringue Pie for dessert.

I didn't think about it when I purchased the clams, but when I opened the baag and saw one barely opened, I rinsed them in cold water. Guess what! It closed and I thought, I think they're alive. I didn't want to cook them ... but I did and they were so delicious. I keep thinking about it.

Been playing around with braising lately.
Last night, had braised chicken.

I'm not sure, but I believe there's a bird involved. My son is waving a dead chicken at me from the kitchen and I'm Hoping it's dinner and not some new dead chicken fad! -
Last night I did chicken breasts browned in a skillet then finished off baking in the oven with a honey and butter glaze and herbs. Accompaniment was diced potatoes, onions, and peppers sauteed in butter and seasoned with garlic and herbs.-
2 boneless skinless chicken breasts
1/4 + 2 tbsp. butter
3-4 tbs. honey (I'm guessing because I didn't measure)
Rosemary
Thyme
Tarragon
2 garlic cloves
2 Yukon gold potatoes
diced bell pepper (in variety of colors)
diced red onion
Uber simple. Spray a non-stick pan with a little cooking spray and bring up to medium high heat. Throw in a couple boneless, skinless chicken breasts and brown a couple minutes on both sides. This is just for presentation sake at the end.
Heat up the oven to about 375. In a measuring cup melt about 1/4 cup butter with a few tablespoons of honey (didn't measure so I don't know how much I used).
Put the browned chicken on a wire rack set on a sheet pan. Salt and pepper the chicken breasts. Add herbs of choice. I used some rosemary and tarragon but whatever you like works. Pour the honey/butter over the breasts. Pop in the oven and bake until they're about 165 on a thermometer. I found it took around 30 minutes. Remove from oven and cover to rest about 10 minutes.
For the veggies... large dice two Yukon gold potatoes, about 1/2 cup red onion, about 1/3-1/2 cup sweet bell peppers in various colors. Using the same skillet used for the chicken melt about 2 tbs. of butter over medium high heat. Add the potatoes and shake and stir the pan until they begin to brown. Add in the peppers and onions and shake and stir until potatoes are browned. Add in about 2 cloves of garlic that have been diced and continue to cook for a couple minutes - shaking pan to keep potatoes from burning. Sprinkle with a little salt and pepper and some rosemary and thyme. Serve alongside the chicken.
Easy peasy.
Oh, my local grocery carries great pre-diced containers of fresh onion and multi-colored bell peppers perfect for throwing together things like this at the last minute. -

Tonight I re-purposed what was left from last night and ended up with a pasta dish featuring a cream sauce and bits of the left over chicken cut up into bite sized pieces.
The cream sauce is very easy. A few tablespoons of olive oil in a large pan and heat at medium high until shimmering. Toss in some of the left over diced onion and peppers and sautee until tender. Toss in a few cloves of diced fresh garlic and heat for another couple minutes. Add 3/4 cup of chicken broth and reduce to about half. Add 1 cup of heavy cream, 1/4 cup dry white wine and a tbsp. of flour and heat until reduced to about 1 1/4 cups of sauce. Season with salt, pepper, and oregano. Toss with cooked pasta and roasted chicken cut into bite sized pieces and serve.

And ... I made Orange butter that I plan to use when cooking my chicken breasts today.



It is stored in the refrigerator and I will melt it down and pour in a little Grand Marnier (and cook off the alcohol), and use it as a dipping sauce for the chicken medallions I will dredge in flour and gently fry to a golden brown. Corn with black beans for a side, and one scoop of vanilla bean ice cream after.

This afternoon I prepared a tossed salad, shrimp scampi, a little snow crab in butter and chesapeake old bay seasoning. Them we had apple, cheese and cherry danish ring, 1/4 each.
Later I may grill (in my saute pan) chicken breast with a wasabi - bbq sauce and some of my apple bacon orzo.
