It is stored in the refrigerator and I will melt it down and pour in a little Grand Marnier (and cook off the alcohol), and use it as a dipping sauce for the chicken medallions I will dredge in flour and gently fry to a golden brown. Corn with black beans for a side, and one scoop of vanilla bean ice cream after.  :D</p>]]></description>

Tonight I re-purposed what was left from last night and ended up with a pasta dish featuring a cream sauce and bits of the left over chicken cut up into bite sized pieces.<br />
<br />
The cream sauce is very easy.  A few tablespoons of olive oil in a large pan and heat at medium high until shimmering. Toss in some of the left over diced onion and peppers and sautee until tender. Toss in a few cloves of diced fresh garlic and heat for another couple minutes. Add 3/4 cup of chicken broth and reduce to about half. Add 1 cup of heavy cream, 1/4 cup dry white wine  and a tbsp. of flour and heat until reduced to about 1 1/4 cups of sauce. Season with salt, pepper, and oregano. Toss with cooked pasta and roasted chicken cut into bite sized pieces and serve.</p>]]></description>

				<description><![CDATA[<p>2 boneless skinless chicken breasts<br />
1/4 + 2 tbsp. butter<br />
3-4 tbs. honey (I'm guessing because I didn't measure)<br />
Rosemary<br />
Thyme<br />
Tarragon<br />
2 garlic cloves<br />
2 Yukon gold potatoes<br />
diced bell pepper (in variety of colors)<br />
diced red onion<br />

Uber simple. Spray a non-stick pan with a little cooking spray and bring up to medium high heat. Throw in a couple boneless, skinless chicken breasts and brown a couple minutes on both sides. This is just for presentation sake at the end. <br />
<br />
Heat up the oven to about 375. In a measuring cup melt about 1/4 cup butter with a few tablespoons of honey (didn't measure so I don't know how much I used). <br />
<br />
Put the browned chicken on a wire rack set on a sheet pan. Salt and pepper the chicken breasts. Add herbs of choice. I used some rosemary and tarragon but whatever you like works. Pour the honey/butter over the breasts. Pop in the oven and bake until they're about 165 on a thermometer. I found it took around 30 minutes. Remove from oven and cover to rest about 10 minutes.<br />

For the veggies... large dice two Yukon gold potatoes, about 1/2 cup red onion, about 1/3-1/2 cup sweet bell peppers in various colors. Using the same skillet used for the chicken melt about 2 tbs. of butter over medium high heat. Add the potatoes and shake and stir the pan until they begin to brown. Add in the peppers and onions and shake and stir until potatoes are browned. Add in about 2 cloves of garlic that have been diced and continue to cook for a couple minutes - shaking pan to keep potatoes from burning. Sprinkle with a little salt and pepper and some rosemary and thyme. Serve alongside the chicken. <br />

Easy peasy. :)  Oh, my local grocery carries great pre-diced containers of fresh onion and multi-colored bell peppers perfect for throwing together things like this at the last minute.</p>]]></description>

				<description><![CDATA[<p>Since tonight (Friday) is Varsity Football Game night (my son plays) we will probably do a "kid-friendly meal" since our contractor's little son will be hanging out with us while his Daddy is working.  My children all LOVE to eat "Captain Crunch Chicken;" which sounds nasty but does have a neat, sweetish taste and is kind of addictive!  (Simple to do:  Crush Captain Crunch in huge, sealed baggie.  Shake boneless, skinless chicken breasts or strips in it after dredging them in either egg and milk or just milk.  Place on non-stick sprayed pan and bake at 375f for about 20 minutes or longer -- depending on size and pieces of chicken used.)  We will add a big bowl of garlic mashed potatoes and a nice, cool Waldorf Salad with Hawaiian Rolls.  Easy and good!  Go Admirals!</p>]]></description>

				<description><![CDATA[<p>I just had the fillet mignon section of my grilled porterhouse steak and sliced mushrooms. I have a huge head of cabbage and thick bacon slices. I believe I shall saute them and make some macaroni with Velvetta cheese. (an all-time favorite from childhood. Sometimes I just have to have this). :)</p>]]></description>

				<description><![CDATA[<p>This was very complex and Michael must love you very much for all of the work that you put into your food. I like the quinoa and at some point will see about getting some. I'm with Michael in that couscous always seems kind of grainy and dryish (to me). Perhaps I have never had it prepared correctly. Thanks ever so much for taking the time to explain the food in the photo!  :D  Oh! And I loved the idea of a cheese sauce over the boiled potatoes.</p>]]></description>
