What's for dinner

I thought it would be neat to see what people are fixing for dinner. That way when we get stuck as to what we can fix we can come here and get ideas.

Last night we ent to a Mexican resturant and my daughter and I had fruit de mer fajitas. They were supposed to have scallops, shrimp, fish and muscles in them. The added bonus was squid and baby octopus.

    How funny! Last night I made fresh linguini with frutti di mare and a light tomato sauce. My seafood was: mussels, shrimp, scallops, cod and calamari

    My Niece had her birthday on Sunday and she came by for lunch. We made lemon orzo, bbq chicken breasts and brownies. potato chips and coffee ... but not in that order. We were spending time with her baby girl who is 6 1/2 months old. We had a good time. Not hungry tonight. Hitting the sack early since I got up at 8:30 and had three hours rest.

    Tomorrow I'm planning on making Sugarpies www.sugarpiesfood.com/2011/03/garlic-knots.html "Garlic Knots". The recipe is on his site, and every time I see them my mouth waters! Also will prepare LivingTheGourmet's www.halfhourmeals.com/recipe/shrimp-sausage-spaghetti

      I am coming to eat at your house. Tonight we had chili. I havent been cooking at all this week. I have to this week as I have company coming on Tuesday night.

      this took fifteen minutes total prep and then straight into the oven. I also fixed orzo, but found I only had 1/3 cup, so I waited till it had cooked for five minutes and took some angel hair pasta and snapped it into thirds, tossed it into the orzo and finished it off with olive oil, lemon slices and butter. I did use salt but not as much as I used to. I'm trying.

    Souper soup and grilled cheese sandwiches. Souper soup comes from a 1950s cook book it is cream of chicken and beef vegetable soup mixed together. The first time I tried it I was shocked at how good it was.

      stirfries, roasted veggies, grilled veggies, mrs dash on your veggies, veggies with dips (hummus ans such) I am playing that game too and I have to find other ways to eat. My pad thai I made the other night wasnt so bad either. Veggies and seafood.

      Amy, Good for you! Last night I had clams steamed, broth and linguini. Even though I had not had pasta for a week, as much as I was craving it, I did not enjoy it as much. Most likely because I knew I shouldn't be eating it.

      Normal being chicken pot pie? One of mine and my late Mom's favorites.

      Lunch was fruit bowl and one small multi grain English Muffin toasted with a little honey.

      Dinner: I actually had the baked potatoes (small) the brussels sprouts, five grape tomatoes and a lean piece of fresh salmon. I drank the cola I have held onto for a whole week. Then a bowl of Special K with skim milk and sugar.

      yep the standard pot pie lol. The other had spinach and mushrooms in it so it was not considered standard by hubby lol

    I broke my fast and we dined at Outback restaurant. I did not overeat nor did I finish my supper. Joe ate the triple desserts and I did not care for the way they tasted. They looked fine, but Ugh. I drank water X2 glasses. I have improved.

    OK... Potato salad (bolied potatoes, extra virgin olive oil, greek kalama olives, dill), pan grilled chicken breast (very thinly sliced) topped with salt, pepper, olive oil and a squeeze of lemon, fresh fruit (mandarins and apples) and a glass of red wine :-)

      I had the chicken slices the same way but none of the other, as I was in a hurry. Sounds absolutely scrumptious!

      Looked at your sponge cake recipe and photos! Reminded me of culinary school. When I win the lottery I am going to have a jazz cafe and cooking school.

    A very simple sauteed chicken with a white wine cream sauce along with a crunchy pea salad (from our local deli) and rice.

      No, didn't do any pics... nothing fancy just your basic cream sauce as done by Julia Child many, many years ago. I would love to have had some morels to go with it, but did not feel like running to the high end grocery and dared not try to describe to Michael what a morel might be.

      The Crunchy Pea salad is something the local deli makes: green peas, crunchy rice noodles, shredded carrot and a mayo based sauce (from what I can tell). Very simple but tasty and served chilled.

    Had the fam and fam-in-law-to-be over sunday. Made a lamb roast, but the best part was the veal meatballs with tzatziki sauce I made as appetizers. Had the same basic spice profile as gyros meat, sauteed them in a pan to get them to stay together, stuck 'em on a skewer and grilled them.

      sunset's good. I found my indoor smokeless grill the other day. I hadn't unpacked it from our move Jan 2009! Cleaned it up and hopefully I will not sound the smoke detectors. I recall it being pretty smoke-free. I bought mine at Hecht's ... well now it is Macy's. Grill inside.

    We had tempura flash fried cod fish and chips. Clams, too. I drank a cola. Later a fresh spinach salad with grape tomatoes.

      Egg Noodles have that homemade flavor with a richness and taste that is characteristic of the Amish cooks. I imagine you sharing this meal by soft candlelight and a vase of flowers.

    Asian inspired lemon chicken over broccoli and rice. It's lightly battered bite sized pieces of boneless/skinless chicken breast sauteed in canola/peanut oil and topped with a lemon glaze. Very good!

    Tonight we are BBQ some pork ribs with liquid smoke and a new spice I bought from Penzeys "chicago spices". Smells good. We will see

    Tonight I had fettucini for the first time in THREE weeks! I was eating pasta four times a week, for sure! I also had a small piece of cake and ice cream. Ooh so good. I drank a cola and had shrimp, Italian sausage, portobello mushrooms and brussels sprouts. I was taking a day off.

    I had cucumber, too and it was in a small bowl. I did enjoy myself.

    for dinner tonight will be leftovers. Homemade pizza, bbq pork, etc... meanwhile am making LOTS of pulled pork to take to my older daughter school for Teacher Appreciation week. Also made a strawberry ice cream that came out fantastic! Will bring that to school on Thursday!

    Wesley's Mushroom Garlic Smashed Potatoes It is so fun to let my 6 year old cook. He helped bake 3 large potatoes, smashed them added butter, one can cream of mushroom soup and some roasted garlic powder. They totally rocked. We ate this for lunch with baked chicken.

    We had the salad bar at Ruby Tuesdays. Joe got New Orleans fish dinner and I only taster one small bite of the fish. I have been drinking filtered water with lemons thrown in. When we went shopping we got fruits and veggies. No sodas, no ice cream, no candy (although I did fondle five or six bags ... different varieties), no pastas and no chips. I am very proud of myself. Later I'll bake chicken breasts for the kitties, and they said they will Meow share them with me. I eat less and less poultry. My portions are better. I am losing some inches. Yay!

      I took photos but the camera is downstairs watching TV.

      Actually I roasted baby carrots, three small wedges of cabbage one small onion and a few grape tomatoes for contrast.

      While I waited for everything to cook I cut up a little bit of raw green cabbage and three grape tomatoes. EVOO & salt. Small salad. I like the cabbage because you really have to chew it thoroughly and it helps with the chewing and the brain function. I was not as hungry for doing this simple thing.

    Tonight cols crab legs leftovers dipped in hot butter and old bay seasoning, and a few steamed spiced shrimps.Four saltine crackers. Earlier I had an orange.

    Mine is boring... I am doing a detox/cleanse because of the insane amounts of sugar I have been consuming. So its was roasted salmon, green salad and water with lemon for dessert it was fresh blueberries. Today was day 2 I finish up on Friday. I must say I feel fantastic...I think its working! But I also can't wait until I can bake homemade chocolate chip cookies on Saturday and eat them all up LOL!

    Look at Sugarpies crepes up above...Thats absolute torture...I want to eat them NOW..they look so yummy!

      I admit I was starving and have seriously avoided pasta for the past month. It is a huge weakness of mine, too. So it has been extra hard. I discarded the shell, melted butted, sauteed the shrimp and threw on some old bay. Tossed in the angel hair and in 12 minutes we were eating.
