    Rebekka's chicken spaghetti she makes it with onion, mushroom, chicken, itilain seasonings, olive oil, diced tomatoes, and a can of crushed black olives. That is the twist I guess I wasnt expecting that and if she is in the mood she throws in crushed red pepper. (Rebekka is my 13 year old daughter.) She is great at making sauces for pastas.

    Italian Stew

    This is one of my all time favorite stew recipes. The savory flavors of Italy remind me of a hearty minestrone soup without the pasta or beans.

    1 (12 ounce) bag frozen vegetarian sausage crumbles (or 1 pound Italian turkey sausage cooked, rinsed, drained and crumbled)
    4 small zucchini- cut into ½” slices (about 8 cups)
    3 (14.5 ounce) cans Italian style stewed tomatoes Italian seasonings already included (oregano, etc.)
    1 cup frozen chopped onion
    1 (15 ounce) can reduced sodium fat-free beef broth
    1 teaspoon Italian seasoning blend

    -In slow cooker mix together sausage, zucchini, stewed tomatoes, onion, broth, and seasoning blend.

    -Cover. Cook on low for 5-6 hours or on high for 2 hours.

    Yield: 13 (1 cup) servings
    Calories: 81
    Total Fat: 2 grams
    Percent Fat Calories: 17%
    Cholesterol: 0 mg
    Carbohydrate: 10 grams
    Dietary Fiber: 3 grams
    Protein: 7 grams
    Sodium: 399 mg
    Diabetic Exchanges: 2 vegetable, 1/2 lean meat

    Preparation Time: 10 minutes or less
    Cooking Time: On low for 5-6 hours or on high for 2 hours.
    Total Time: 6 hours and 10 minutes or less
