ALMOND BRITTLE

Nice alternative to peanut brittle but you must use RAW almonds.

1 cup Sugar
1/2 cup Light Corn Syrup
1/4 t salt
1 cup RAW almonds
1T butter
1t baking soda

Preparation

Mix sugar, syrup and salt in light colored skillet and mix over medium high heat until it comes to a full boil. Add the RAW almonds and cook until it turns a light golden. Remove from heat and add the butter and stir to mix well. Sprinkle the soda over the top and stir well. Pour onto a buttered baking sheet. Do not spread it out with anything. Carefully pick up the pan and tilt to spred it out as best as you can. It will spread while cooling. When hard, break into serving pieces. NOTE: I use a light colored pan because it is easier to see when it turns golden. In a dark pan it is very easy to over cook and burn. This is a very easy recipe, try it. I waited far too long to make my first brittle!
