Annabelle's Breakfast Casserole
Description
One of my favorite recipes that my Grandma makes has to be this one. She is famous for her huge breakfasts because our whole family would always stay over during the holidays and wake up hungry. Even though we were a large group, Grandma always seemed to make enough food to feed an army instead. This casserole seems pretty simple to make, but it encompasses every breakfast flavor there is. Try it out and see if your family raves about it as much as ours does.

1 package frozen southern style hash browns
1 pound bacon
1 pound breakfast sausage, scrambled
12 eggs
2 cups grated cheddar cheese
1 cup diced onions (optional)
1 cup diced bell peppers (optional)
Preparation
In separate skillets, fry bacon, cook and break up sausage, brown hash browns (add onion and peppers), and scramble eggs. Take a large baking pan and spray with Pam. Layer potatoes, crumble bacon, add sausage, and eggs. Top with cheese and repeat layers one more time. Finish off with more cheese. Bake in 350 degree oven for about 15 minutes, or until cheese is melted and bubbly. Season with salt and pepper and serve. Goes really well with her homemade biscuits and gravy, but that is another recipe.

This is a great hearty breakfast for a crowd of hungry people.Its filling and tasty.great for brunch too.Heck we have it for supper sometimes.Its just good old comfort food quick!
