Anne's Pumpkin Chocolate Chip Muffins
Description
This is the most popular baked-good I make in my home. The kids can't get enough and they are so moist and delicious.
Yes, there is olive oil in them - please don't skip it - it's part of what adds such wonderful moisture to them.
Makes 24 regular sized muffins or 12 large

2 cups pumpkin puree
1 cup granulated sugar
1 cup packed brown sugar
4 large eggs
3/4 cup vegetable oil
3/4 cup Olive Oil
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
1 teaspoon salt
2 cups chocolate chips
Preparation
1. In a mixing bowl, beat eggs, sugar, pumpkin and oils until smooth.
2. Combine flour, baking soda, baking powder, cinnamon and salt-add to pumpkin mixture and mix well. Fold in chips.
3. Fill greased or paper-lined muffin cups three-fourths full.
4. Bake at 400 degrees F for 16 to 20 minutes or until muffins test done.
5. Cool in pan 10 minutes before removing to a wire rack.
