Apple & Cinnamon Stuffed Pork Tenderloin
Description
Here is an excellent fall dish that takes advantage of a seasonal fruit, apples, with a great pairing in pork tenderloin. This dish is great for the barbecue, but you could also oven roast it if you choose.

1 Pork Tenderloin
2 apples
2 tsp cinnamon
Preparation
1) Slice your apples into 8-10 small slices. The slices should be small enough to stuff into the tenderloin, so use the size of the tenderloin as your guide. Season the apples with some of the cinnamon (either fresh or dried) for extra flavour.
2) Butterfly your pork tenderloin, creating enough space to stuff with your apple slices. You can do this easily by cutting about 50% through the middle of the tenderloin, leading a bit of space at each end to contain the stuffing.
3) Stuff the tenderloin with your apple slices. Try to avoid over-stuffing the tenderloin as this will lead to you burning the apples when they're on the grill. Once finished, fold and wrap the tenderloin with string at 4-5 points to ensure the apple is fully covered.
4) Pre-heat your grill to high. You should brush a bit of olive oil on the grill to ensure the tenderloin doesn't stick. When I last made this, I also brushed olive oil on the outside of the tenderloin.
5) Grill the tenderloin for about 3-4 minutes on each side. Ensure that you check regularly to ensure you don't burn any of the sides. You should have very defined grill marks on each side if you time this correctly.
6) Once all four sides have been grilled, place a sheet of tinfoil on the grill and move the tenderloin on top of the tinfoil. Cover the tenderloin with another sheet of tinfoil. This will keep a bit of heat within and allow the juices from the meat to stay on the tinfoil instead of dripping into the grill.
7) Pull the tenderloin once the internal temperature reaches 45 degrees F. The meat will continue to cook for a few minutes after removing from the grill. You'll want to let it stand for about 5 minutes before cutting into slices and serving. Enjoy!
