My Step-Mom, Cora, makes the best Arroz con pollo around!. unfortunately she won't give me the recipe! So I made my own, and tried to make it as similar as possible. Arroz con Pollo is a great meal to make when you have a large group to feed as it is really simple to make. Throw in some vegetables or seasonings that you like, or just make it as is. It will surely become one of your favorites too!
2 teaspoons olive oil
1 onion, chopped
1 garlic clove, crushed
6 chicken thigh fillets, halved crossways
1 teaspoon ground cumin
1 teaspoon ground sweet paprika
½ teaspoon saffron threads
¾ cup long grain white rice
1 can diced Italian Roma tomatoes
1 cup chicken stock
1 tablespoon tomato paste
1 can fire roasted peeled whole peppers, chopped
¼ cup parsley, coarsely chopped
Heat the oil in a large saucepan over medium heat. Add onion and garlic and cook for about 3-4 minutes. Place chicken in the skillet and cook for another 3-4 minutes, or until brown all over. Stir in the paprika, cumin, and saffron and cook for about 1 minute. Stir often. Stir in the rice, tomatoes, and chicken stock and bring to a boil. Reduce heat to low and cook, covered, for about 15 minutes. Rice should be tender.
Last, add in your tomato paste, parsley, and peppers and stir well. Cook for about 3 minutes or until everything is heated through. Ready to serve! Top with cheese or sour cream if you like!

Lovely combination for the chicken thighs. Lots of flavors for this dark portion of the chicken.
