Arugula Salad with Pears
Description
Great salad for entertaining especially this time of year when pomegranates are in season
add to shopping list Ingredients
2 Tbs Lemon Juice
1 Tbs honey
1/3 Cup Grapeseed Oil or Canola Oil
1 1/2 tsp Chopped Shallot
1 1/2 tsp Dijon mustard
salt and pepper, to taste
8 oz arugula
1 Bosc Pear, thinly sliced
1/4 Cup Toasted Walnuts
1 Pomegranate, Seeded
1/3 lb Grated Parmigiano Cheese
Preparation
Whisk together lemon juice, honey, oil, shallot, mustard, salt and pepper. Remove seeds from pomegranate. Lightly coat Arugula with vinaigrette. Do not use all the dressing. Add Pear slices, walnuts, and pomegranate. Drizzle with remaining dressing and sprinkle with cheese.
