Autumn Couscous
Description
A rainbow of flavors, a successful marriage between celery, squash, zucchini and tomatoes with couscous. Absolutely delicious!

125 gr water
125 gr Couscous
1 tbsp extra vergin olive oil
1 butter
50 ml vegetable broth
6 cherry tomatoes
1 stalk celery
1 zucchini
pumpkin grilled
1 tbsp toasted pine nuts
basil
1 clove garlic
2 tbsp extra virgin olive oil
salt
pepper
Preparation
Boil water and add a teaspoon of salt.
Turn off and pour in the couscous, stirring, add oil and mix again.
Allow to absorb the water for 5 minutes, add the butter with a fork to mix gin.
In a fry pan on low heat with a tablespoon of oil to be removed as soon as the garlic browns, add the celery and zucchini washed and cut into cubes.
Drizzle with the hot broth and gradually add in order the grilled squash and chopped tomatoes cut in half. Cook for 5 minutes.
Salt and pepper the vegetables and when the broth is almost completely evaporated add the couscous and pine nuts.
Turn off the heat and stir. Serve immediately with basil and a drizzle of extra virgin oil.
