Baked Chicken Tenders
Description
This is a healthier version of chicken tenders. I've been making them for years for my son. He loves them, and doesn't even realize they are healthy.

1 lb chicken tenders
1/2 cup light mayo
1/2 cup italian bread crumbs
1/2 cup fresh parmesan cheese (grated)
1/2 tsp Black Pepper
1/2 tsp Cayenne Pepper
Preparation
Preheat oven to 425 degrees.
Spray baking sheet with cooking spray.
In a bowl, coat the chicken with the mayo.
Mix the bread crumbs, cheese, and peppers together in a large ziploc.
Place the chicken in the ziploc to coat with the bread crumb mixture.
Bake for 8-10 minutes, flip the chicken, then bake for an additional 8-10 minutes until crispy.
Serve with your favorite dipping sauce.

I am going to try this. I am certain the combination of mayo and bread crumbs will insure the tenders will be just that. Tender!

Lots of options here -- could serve chopped up with a salad or with salad on the side. Looks great, simplysandi!
I'm so glad you guys like this recipe. I use it in salads and as a healthier version of chicken parm, too. I use chicken breast. You can sometimes find them cut up into strips aka tenders, or you can slice the chicken breast into strips yourself.
