Baked Macaroni and Cheese

My mom always made this Baked Macaroni and Cheese recipe when I was growing up - we never had the boxed kind. Toss up a salad or steam some broccoli and you have a full meal that is delicious and very comforting.

add to shopping list Ingredients

1 1/2 cups Elbow macaroni
3T butter
2T flour
2 cups milk
2 cups cheddar cheese; cubed

Preparation

Cook 1 1/2 cups elbow macaroni in boiling, lightly salted water per package directions for al dente; drain in a colander, rinse with warm water, set aside. In the pasta pan melt 3T butter; blend in 2T flour. Then slowly whisk in 2 cups of milk and stir constantly until thick and bubbly. Add 2 cups of cubed cheddar cheese; stir in until melted. Toss in the cooked elbow macaroni, blending well. Turn out into a lightly buttered 1 1/2 quart casserole. Bake at 350 degrees for 35-40 minutes or until golden brown on top and bubbly. Makes 6 servings...if you are lucky :)

Hints:
~ Before baking top with plain or seasoned bread crumbs, crumbled tortilla chips, thinly sliced tomatoes, or grated Parmesan
~ Combine different cheeses for a flavor change
~ Add 1/4 cup of finely chopped onions and blend well
~ Thinly slice 1/2 lb of regular or spicy Kielbasa sausage and stir in before baking
~ Cube or slice one cup of baked ham and mix into the dish prior to baking
