Baked Tuna Noodle Casserole
Description
This easy baked tuna noodle casserole is a hearty dish that can be thrown together quickly and can last for days as leftovers. We make this at least twice a month at our house. The garlic, mushrooms and basil add some fantastic depth to this dish. Feel free to substitute in whole wheat penne pasta for an even healthier variation of this tasty dish.

4 Garlic Cloves
2 cups cream
1 cup parmesan cheese
2 cans white albacore tuna
10 ounces penne pasta
2 tablespoons butter
8 ounces mushrooms
1 teaspoon salt
3/4 teaspoon pepper
2 tablespoons fresh basil
Preparation
1 - Pre-heat your oven to 450 degrees. At the same time, bring a large pot of water to a boil. You'll want to add a good amount of salt to the water.
2 - Wash and slice your mushrooms, chop your garlic cloves and dice your fresh basil. It is okay for you to use dried basil but the flavor is much, much better if you go with fresh basil.
3 - Partially cook the penne pasta in the boiling water. You'll want the pasta to be about halfway cooked as the cooking will finish in the oven.
4 - In a bowl, stir together your cream, about 3/4th of your parmesan cheese, basil, salt and pepper. Once stirred, add your tuna, garlic and mushrooms.
5 - Add your pasta to the bowl and mix together well. Pour this all into a deep baking dish and evenly spread the mixture.
6 - Bake uncovered for 25 minutes or so. You'll want to see a good golden brown color on the top layer. Be very careful during the last 10 minutes or so as you'll want to avoid burning any of the noodles.
7 - Sprinkle the last 1/4 of parmesan over the dish when you pull it from the oven. Remove the portions you desire and enjoy! This is a great leftover dish, too!
