My Stepfather makes this banana bread and it is the best I have ever tasted! I am always so excited every time he makes it because he usually gives me a loaf to take home. You can make it with or without nuts. I like to heat it in the microwave for a few seconds and then top with butter. Yummy!
2 cups sifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter or shortening
1 cup sugar
2 eggs
3 ripe bananas, smashed
1/3 cup milk
1 teaspoon lemon juice
1/2 cup chopped nuts (optional)
Preheat your oven to 350 degrees. In a large bowl, cream butter and add sugar gradually. Add in eggs and bananas, mix well. Combine milk and lemon juice, and mix in. In another bowl, add your dry ingredients and stir well. Now gradually add your dry ingredients into the wet mixture. Mix until fully combined.
Grease your pan well (we use a 9 x 5 x 3 pan). Bake for 60-70 minutes. Use the spring test to see if loaf is done. Remove from heat and cool completely on a wire rack. Now serve and enjoy!
I made this banana bread yesterday and was so happy with how it turned out. I didn't have any buttermilk so I used one cup of 2% milk and added a Tablespoon of lemon juice to it and let it sit for 5 mins. I also used walnuts and pecans instead of just one kind of nut. I saved half the nuts and sprinkled them on the top just prior to baking for a nice decorative finish. The bread was so moist and tasty!My mom always made a good banana bread but this tops her recipe by far! Thanks for the good eats.
