This recipe is a fantastic & easy way to use ripe bananas that would otherwise go to waste. These muffins are much tastier when served fresh.
1.5 cups flour
3/4 cup Sugar
1 teaspoon baking powder
1 teaspoon baking soda
pinch salt
4 large, ripe, bananas
6 tablespoons butter
1 extra large egg
1 teaspoon vanilla essence
Preheat your oven to 180 degrees C.
Spray 9 muffin cups with non-stick cooking spray such as pam.
Add flour, sugar, baking powder, baking soda and salt together in a large bowl.
Take a separate bowl and mash the bananas. Next, melt butter. Lightly beat the egg and add with the butter and vanilla essence to the bananas. By hand, mix everything together.
Pour the mix into the pre-greased cups so that they are about 3/4 full.
Bake for 20 to 25 minutes. They should look golden brown when ready.
The key to making a delicious muffin is not to over mix them. Mixing them by hand in the bowl is one of the better ways to prevent over mixing.
