Banana Ricotta Coffee Cake
Description
I had a ton of bananas that were going bad and I also had some leftover ricotta cheese. I combined both to make a sweet and moist banana ricotta coffee cake. The ricotta plus the bananas really gave it a moistness and great taste, without resorting to using a ton of butter.

1/2 cup butter
3/4 cup Sugar
2 t vanilla
2 eggs
2 large very ripe bananas
2 t baking soda
3 cups flour
1 t salt
2 cups light ricotta cheese
2 T ground cinammon
1/2 cup Brown Sugar
1/4 cup chopped almonds
Preparation
Preheat oven to 350ยบ. In a bowl mash bananas with sugar, vanilla, butter. Add eggs. In another bowl combine flour, baking powder and salt. Add ricotta and sugar mixture into the flour mixture. Mix until batter is smooth. In a bowl mix cinnamon, nuts and brown sugar. You could make these into muffins or a bread, I made both! The recipe above made 1 loaf and 12 cupcakes. Spoon the batter into whichever kind of pan you are using and sprinkle with the cinammon mix (cinammon, brown sugar, chopped almonds). Bake 30 minutes and cool for about 10 minutes before removing from pan.

I was slowed down using this reciepe. your instructions were not complete, at least for me. 20 minutes is now 30 and it is still not firm. I will hold off on judging taste and time until it is finished.I used one loaf pan and one 8X8 pan to judge time and density.I am far from a great baker, so it may be that I just need more details.Just tested the loaf after 40 min and it is still loose .The 8x8 should be ready in 10 more min, for a total of 30 minutes.
