Barbecue Chicken Pizza

I remember I was a child when I first tried barbecue chicken pizza and I loved it. It was such an innovative way to make pizza and I really enjoyed the taste of the tangy barbecue sauce. This version is a simple recipe that you can easily make in a flash when you find out you are having company over last minute. Try it out tonight and see why it is my Mom's favorite pizza ever.

add to shopping list Ingredients

2 tablespoons olive oil
1 packaged pizza dough
½ pound of chicken tenders
2/3 cup barbecue sauce (any you like)
¾ cup shredded Gouda cheese
1 cup shredded Mozzarella
¾ cup shredded Parmesan
½ red onion, thinly sliced
3 tablespoons fresh cilantro, chopped

Preparation

In a large skillet, heat your oil and add your chicken tenders. Sauté chicken until it is cooked through and golden brown. Remove from heat. Dice chicken into bite sized pieces and place in a bowl. Toss with 2 tablespoons of barbecue sauce and make sure it is evenly coated. Set aside.

Spread your dough out on a floured baking sheet. Make sure it is evenly distributed. Coat the dough with the remaining barbecue sauce. Sprinkle cheese over the top. Now add onions and chicken. Place into the oven and cook for about 20 minutes. Cheese should be bubbly and crust will be golden brown. Remove from heat and sprinkle with cilantro. Now serve!
