Basil-Bacon Potato Salad
Description
Basil is such a wonderful addition to anything that includes bacon, but it could stand on its own in this salad without the bacon for a vegetarian version!

4 Potatoes (medium-sized)
1/2 bell pepper
4 strips bacon
1/4 Onion (medium-sized, minced)
Fresh Basil, to taste
1/2 cup Light Mayonnaise
2 TBSP Prepared Mustard
1/4 cup Apple-Cider Vinegar
2 tsp Sugar (or to taste)
salt and pepper, to taste
1 tsp Prepared Horseradish (optional)
Preparation
Dice potatoes (I leave on the skins), cover with water, and boil over medium heat until soft. Meanwhile prepare other ingredients: dice pepper, mince onion, chop basil, and fry and crumble bacon. Mix dressing ingredients (mayo, mustard, vinegar, sugar, salt, pepper, and horseradish) with a whisk until smooth. When potatoes are soft, drain and return to pan. Pour dressing over warm potatoes and stir to coat. Once potatoes are cool, stir in other ingredients.

These are herbs, spices and ingredients which are blended well. I bet this special potato salad is the toast of the meal. It is really hard to find great potato salads. my mother-in law used to prepare a great one. I have only enjoyed four or five recipes all through the years, but yours looks very promising.
