Beef Casserole with Biscuit Top
Description
This is a version of my Great Aunt Cindi's recipe. I love beef potpie, but don't always have the time to make it. This quick casserole has all the same flavors but is super easy to prepare. Toss in whatever ingredients you prefer and create your own recipe. This casserole is a fun way to get kids to eat their veggies too. They hide under the biscuits and they hardly notice them.

1 pound ground beef
½ onion, chopped
¼ cup green pepper, chopped
1 cup tomato sauce
½ teaspoon garlic salt
1 can kidney beans
1 can corn
1 can buttermilk biscuits (8 oz.)
1 ½ cup shredded cheese
½ cup sour cream
1 egg, slightly beaten
2 tablespoons butter
Preparation
Brown beef in a pan and add in onion and green pepper. Cook until beef is done and onion and pepper are soft. Drain off fat. Stir in tomato sauce, kidney beans, corn, and garlic salt. Simmer on medium/low heat. Preheat your oven to 375 degrees. In another bowl, combine egg, sour cream, and cheese. Mix well. Remove meat mixture from heat and stir in cream/cheese mixture. Stir well. Take a large baking dish and spray with Pam. Spoon mixture into your baking dish. Remove your biscuits and break into halves. Butter each biscuit on one side. Place them buttered side up, on top of the mixture about 1 inch apart. Bake for about 10-12 minutes, or until biscuits are golden. Now you are ready to enjoy!
