Beef Over Rice
Description
This is both an easy and tasty 30-minute meal. It’s ideal to make after work when you’re too tired to cook and you don’t want to pick up supper at a drive-thru.
(I’m guilty of this more times than I want to admit.) I won't talk about the number of times I visit a drive-thru in any given week.
This is my mom’s recipe for beef tips over rice. You can also serve it with buttered noodles or mashed potatoes, but my mom always serves it with rice.

1 pound lean beef cut into bite size pieces
1 medium onion chopped
3 tablespoons Olive Oil
1½ cups beef froth
1 tablespoon Cornstarch
¼ cups water or beef broth
Salt & Pepper
Preparation
1. Heat olive oil in skillet over medium heat. Add beef and sauté for about four minutes, turning as needed. Remove from pan and set aside. Add onions to pan and sauté for about five minutes or until tender. Deglaze pan with 1½ cups of beef broth. Add beef back to pan.
2. Dissolve cornstarch in ¼ cup of beef broth or water and add to pan with beef and onions. Bring back to a boil. Cook beef mixture for about 2-3 minutes or until mixture thickens. Add salt and pepper as desired. Serve over rice, noodles, or mashed potatoes.
