Beef Tips and Rice
Description
I created this dish after wanting my late mothers pot roast but I wanted something easier to make and something that was a meal unto itself. The key is the 3 cans of GOLDEN Mushroom Soup by Campbells. Once you have made this dish, you can add your own spices to give it your mother's special taste.

3 lbs. cut up beef tips (the size you want)
1 onion- diced
1 bellpepper- diced
3 cloves garlic- diced or minced
3 cans of GOLDEN mushroom soup
Salt to taste
1Tbl dried basil
pepper to taste
3 plus cans of water
3 Tbl. corn starch
1/4 C. Cold Water
2 or 3 cans of mushrooms or fresh- button
3 tomatoes- chopped
2 C. white rice
4 C. water
3Tbl. Olive Oil
Preparation
Brown beef tips. Saute onion, garlic, and bellpepper. After about 5 min. add tomatoes. Stir occassionaly for 3 min. Add back beef tips. Add Golden mushroom soup,mushrooms, water, salt, pepper, basil and any other seasoning you would like. Bring to a boil. Turn down to low, cover and simmer for 1 1/2 to 2 hours, until meat is falling apart. When meat is to your liking, in small bowl, add corn starch and water, stir until runny then add to your beef tips. This makes the gravy thick. Make your 2 cups of rice with the 4 C. of water for 20 min then serve beef tips over rice. Serve with salad and garlic bread. It's delicious!
