Beer and Cheese Dip
Description
This recipe came from an old community cookbook that was my mother’s. I remember she used to serve it when she and my dad had friends over to play cards, and it was a favorite at potlucks and super-bowl parties too. It's tangy with a little bit of a "kick" from the cayenne.
add to shopping list Ingredients
2 lb. sharp cheddar cheese, grated
½ medium onion, chopped fine
2 cloves garlic, minced
1 tsp. Worcestershire sauce
¼ tsp. cayenne pepper
1 can (12 oz.) stale beer
Preparation
In a small saucepan, heat beer to a simmer. In a large bowl combine remaining ingredients with an electric mixer. Add warm beer and combine with mixer. Serve. Note: This dip is good spread on crackers, or as a dip for veggies, nachos, pita wedges, or pretzels.

This looks delicious and would make for an excellent New Year's Eve appetizer. It's not often that you see a cheese queso dip like this with beer as one of the main ingredients -- I'm looking forward to trying this. Thanks for sharing, Penny!
