This amazing dessert is a perfect end to a great dinner.
2 Packages Lady Fingers
14 oz Mascarpone Cheese
3 Eggs, divided
4 Tbsps Sugar (or confectioner's sugar)
2 Cups strong Coffee (plus splash of coffee liqueur)
Bitter Cocoa Powder for sprinkling
While gradually adding sugar, beat egg yolks until pale in color. Add Mascarpone Cheese and mix gently until smooth.
In a separate bowl, beat egg whites with a wire whisk or electric beater until thick and gently place them into the Mascarpone Cheese mixture.
Dip Lady Fingers quickly into the coffee one at a time and arrange them in a rectangular serving dish.
Cover Lady Fingers with this cream mixture (use all ingredients to make more layers) Sprinkle the top with bitter cocoa powder.
Refrigerate for at least one hour before serving. If leaving stand overnight, cover with plastic wrap or lid to prevent the top from drying out.
