This isn't your everyday tomato salsa, but boy, is it good! I swear, I could eat this every day and never get sick of it. It's a fantastic summer appetizer and a hit everywhere it goes! 1 1/2 cups frozen corn, thawed
1 can Black beans, drained and rinsed
1 1/2 cups chopped tomatoes (I use grape tomatoes, but regular tomatoes would work too.)
1/2 cup minced red onion
2 avocados, chopped
1/4 cup minced fresh cilantro
For the Dressing: the juice of one lime (approx. 3 Tbsp.)
2 Tbsp. Olive Oil
1 Tbsp. Red Wine Vinegar
1 tsp. salt
1/2 tsp. pepper
tortilla chips to serve
Mix together all of the dressing ingredients and set aside.
Combine all of the remaining ingredients in a medium-sized bowl. Pour the dressing over the veggies, and toss carefully to combine. Cover and chill until serving time. Serve with tortilla scoops.
