Black Bean, Feta, Corn Salsa Recipe
Description
This Recipe was given to me from one of my bookclub friends. She brought it to one of our annual summer barbeque potlucks. We all loved it. I begged her for the recipe and now I am sharing it with you.
You may use fresh ingredients if they are in season otherwise you may use canned corn and beans.

1 12-15 oz can Shoepeg Corn, drained
1 bunch of green onions
1 package block feta cheese
1/3 cup Olive Oil
1/3 cup Apple Cider Vinegar
4 tsp. White Sugar (to taste)
1 Bag Tortilla Chips
Preparation
Mix oil, vinegar and sugar in a bowl. Dissolve sugar well by stirring. Add black beans, corn. Crumble feta into bowl. Mix all ingredients together. Chop green onions. Add green onions to bowl and stir. Serve with tortilla chips.
Tips: I always make this recipe right in the decorative bowl I am serving it in unless I am making it ahead. It works great as a make ahead recipe. You may double or triple the recipe. My friend suggests serving with Scoops as the chips hold a lot of salsa. she's right the more salsa per chip the better.
