Black Bean Quesadillas
Description
I found this recipe online. You can buy black beans and mash them yourself, as the original recipe suggested. Or, simply buy premashed beans. Substitute refried pinto beans if your kids are picky.
Quesadillas are budget-friendly and easy to make ahead for snacks. Simply reheat them in microwave.
I garnish this dish with avacado because it's edible and delicious. Parsley looks pretty, but I can never use up a whole bunch. It sits for days in the refrigerator and until it's finally tossed. Not a good use of my pennies!
Slice up a fresh melon for dessert.
Mexican food is always a winner with my husband... it's the melted cheese!

2 Cans Mashed Black Beans
1-2/3 cups Salsa
10 8" Flour Tortillas
2 cups Shredded Jalapeno Jack Cheese
1/3 cup sour cream
1 Peeled and sliced avocado
Preparation
In a bowl, mix the beans and 1 cup salsa. Place five tortillas on ungreased baking sheets; spread with bean mixture. Sprinkle with cheese; top with the remaining tortillas.
Bake at 350 degrees F for 15-18 minutes or until crisp and heated through. Cut into wedges.
Serve with sour cream and remaining salsa. Garnish with sliced ripe avocado.
