Black-Eyed Peas My Way
Description
This recipe allows you to take a bland can of black-eyed peas and turn them into something that'll have your taste buds singing. Turn your family into pea lovers!

1 can black-eyed peas
1 onion small (diced)
4 Portobello mushroom slices
1 tomato small (cut into chunks)
1 Tbsp Garlic Powder
1/2 tsp Salt & Pepper
4 Tbsp unsalted butter
Preparation
1) Melt two tablespoons butter in skillet
2) Add onions and cook for five minutes
3) Add mushrooms and cook for three minutes
4) Add tomato & seasonings and cook five minutes
5) Remove from pan place in bowl and set aside
6) Melt two tablespoons butter in the same skillet
7) Add drained can of black-eyed peas
8) Cook for five minutes
9) Add in the sauteed veggies and stir
10) Remove from heat and serve

I never thought of putting mushrooms in with black-eyed peas. Hope you don’t mind; I kicked it up a notch. I diced three pieces of thick cut bacon; rendered them crisp, and removed them with a slotted spoon to a paper towel lined bowl. I then sautéed my onions, a small diced jalapeño pepper, the tomatoes and then the mushrooms. I removed all of that with a slotted spoon and then sautéed the peas in the remaining bacon drippings. I put it all back together and served it over a long-grained rice then sprinkled the crumbled bacon over the top. We thought it was pretty good. If you’re adventurous, give it a try.
