Black-Eyed Peas My Way

This recipe allows you to take a bland can of black-eyed peas and turn them into something that'll have your taste buds singing. Turn your family into pea lovers!

Preparation

1) Melt two tablespoons butter in skillet

2) Add onions and cook for five minutes

3) Add mushrooms and cook for three minutes

4) Add tomato & seasonings and cook five minutes

5) Remove from pan place in bowl and set aside

6) Melt two tablespoons butter in the same skillet

7) Add drained can of black-eyed peas

8) Cook for five minutes

9) Add in the sauteed veggies and stir

10) Remove from heat and serve

I never thought of putting mushrooms in with black-eyed peas. Hope you don’t mind; I kicked it up a notch. I diced three pieces of thick cut bacon; rendered them crisp, and removed them with a slotted spoon to a paper towel lined bowl. I then sautéed my onions, a small diced jalapeño pepper, the tomatoes and then the mushrooms. I removed all of that with a slotted spoon and then sautéed the peas in the remaining bacon drippings. I put it all back together and served it over a long-grained rice then sprinkled the crumbled bacon over the top. We thought it was pretty good. If you’re adventurous, give it a try. If it’s okay, maybe I’ll put that up for grabs. Have a great day. And, thanks again.
