Blood Orange and Red Onion Salad
Description
This is my version of a traditional Italian winter salad.

2-3 blood oranges, peeled and sliced
1 med. red onion, thinly sliced
milk (optional)
extra-virgin olive oil
black pepper, freshly cracked
Preparation
If you wish to mellow out the raw onion flavor, soak the onion slices in just enough milk to cover for 20-30 minutes, then drain and rinse.
Combine the onions and oranges in a large bowl, drizzle some extra-virgin olive oil on top (as much or little as you wish), then add some freshly cracked black pepper (to taste) and toss to coat. Let sit for 20-30 minutes so the flavors can mingle, then quickly toss again before serving.
