Blue Cheese Dressing
Description
Ultimate blue cheese dressing. Make it a day before you need to use it. But really, this is not health food. From a cookbook I wrote with Sharon Kramis.

4 ounces Blue cheese, crumbled into small pieces
1 cup buttermilk
1/2 tsp dry mustard
1 tsp Coarse black pepper
1 tsp Worcestershire sauce
1 clove Garlic, minced
1 tsp Kosher Salt
1-2 T Lemon Juice
1 1/3 C Mayonnaise
Preparation
Place all the ingredients in a medium-sized mixing bowl. Stir together. With an electric mixer set at low speed to prevent splashing, mix together in a separate bowl half the quantity at a time, until well blended. Don't over mix. Refrigerate overnight. This dressing must sit 24-hours before serving. Yield: 2 1/2 cups
