Bow tie pasta with red peppers and smoked mozzarella
Description
A lovely and colorful pasta dish made with bow-tie pasta (farfalle), sweet red peppers, mozzarella and fresh basil.

1 lb bow-tie pasta (farfalle)
1 lb sweet red peppers
1 garlic clove
5 tbsp extra virgin olive oil
9 oz smoked mozzarella cheese
Preparation
Bring a large pot of salted water to a boil.
Wash peppers, cut off tops and remove seeds. Chop them into small pieces.Cut the fresh mozzarella into 3/4 inch cubes.
In a large skillet, pour 5 tbsp of olive oil and sautè the garlic over medium heat, then add the peppers and 1 tsp of fine salt.
Cook for about 15 minutes, then discard the garlic.
Cook pasta in boiling salted water until al dente. Drain pasta well and add to skillet. Cook for a few minutes, then turn off the flame and add the smoked mozzarella and some fresh basil.This pasta dish is delicious hot or cold!
