Breaded Parmesan Chicken Breasts

I love this recipe because it can be served in so many different ways. Keep it in its original form, and serve it over some leafy greens with a lemon vinaigrette. Add some Italian herbs and serve it over pasta with marinara sauce, or Alfredo sauce. There are so many ways you can play with it. No matter what you do, your stomach will be satisfied!

4 to 6 boneless, skinless chicken breasts
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
2 extra-large eggs
1 tablespoon water
1 1/4 cups seasoned dry bread crumbs
1/2 cup freshly grated Parmesan
1 tablespoon freshly chopped parsley
2 tabs of butter
Olive Oil

Preparation

Start by trimming your chicken breasts of any extra fat. Now pound thin with a meat tenderizer or a rolling pan (place chicken between wax paper). You want them to be about ¼ inch thick.

Take out three plates or wide bowls. On one plate, combine your flour, salt and pepper. Mix with a fork. On the second plate, beat the eggs with the water. On the last one, combine the bread crumbs, ½ of your parsley, and your Parmesan.

Take your chicken breasts and coat each side with the flour mixture. Now move to the egg mixture and cover both sides again. Last, dip in the breadcrumb mixture and cover all surface area with the crumbs. Use you fingers and make sure they are coated well. Pat lightly to dust off excess.

Heat your oil and butter in a large skillet. Once hot, add your chicken breasts and allow to cook on medium-low heat for about 3 minutes on each side. You do not want to turn them over more than once because the breading will come off. Once fully cooked, remove them from heat and allow to sit for a few minutes. If you cut into them immediately, the juices will all run out...allowing them to cool maintains their juiciness. Garnish with the rest of your parsley and some more Parmesan cheese. Bon appetite!

Omg I loved it. It was amazing. Then my husband came home from work and tried it and fell in love with it. The only thing he wanted was some spiciness to it. Everytime I get a recipe off here itturns out amazing
