Broiled Fish

This is my favorite broiled fish, it was stuffed with onions, ginger, garlic and tomato. Milk fish for me is the best, but any med-size fleshy fish of your choice would be good to broil.

Preparation

* Clean whole fish leaving scales intact as in milkfish (however, some fish don not have scales)
* Slit stomach vertically; rub fish with salt, lemon juice, and pepper inside and out.
* Stuff stomach with onions, tomatoes, ginger, and green onions or chives.
* Wrap fish in wilted banana leaves or aluminum foil. If latter is used, be sure to rub a little oil on fish.
* Broil over charcoal or in oven until half done; then remove wrapping and continue until skin is a light brown color .
* Serve with lemon juice or calamansi and soy sauce.
