Butter Rum Muffins
Description
The luscious taste of real butter and decadence of rum in a great treat for breakfast or even as a dessert!

1/2 cup Butter (softened)
1/2 cup Sugar
2 large eggs
2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp Ground Clove
1/2 cup milk
2 tbls Rum Extract (or 3 tbls. Light Rum)
Preparation
1. Preheat oven to 375 degrees F.
2. Grease or line muffin tins (6 large or 12 small cups)
3. Cream together butter and sugar.
4. Add eggs, one at a time, beating just until blended after each addition.
5. Sift flour, baking powder, salt, cloves and nutmeg together in a separate bowl.
6. Combine milk and rum extract in another bowl.
7. Add flour mixture to butter mixture alternately with milk mixture, ending with flour mixture.
8. Spoon batter into muffin pan, filling 3/4 full.
9. Bake for 20 to 25 minutes or until golden.
10. Remove from pans immediately and cool on a wire rack.
These can actually be iced with a rum/sugar glaze for added sweetness.
